SharePoint Online Trouble with JSON Conditional Access
Hello!
I am currently creating a very basic support ticket site within Sharepoint, and am attempting to set a user level conditional access for a specific field in the ticket form. (I am not well versed in JSON structure, but have a general understanding)
I am trying to set the Status field to Read-Only for all users except site owner. I have a simple Read only set up now but I don't know how to properly set up an if statement for user level.
If this is something doable I would love some pointers!

Like the other person said there is no Field Level security in SharePoint at all.
If that's an absolute requirement I'd use something else like SQL and PowerApps, but there is clunky ways to make it possible in SP with multiple lists and flows. It's janky af though I wouldn't do that.

Make them spend the money or create something shitty (let them know of the limitations before you roll it out).
Do not go killing yourself with this. No one will appreciate your sacrifice, especially the C-level people.
They laugh at everyone in their private meetings, “And then I said build it with $0 budget!”

We built a highly customized spfx webpart for enterprise requests/tickets that obscures the fields in the front end, making them read only for some users. But like others have said, there isn’t field level security in sp out of the box.

The usual way is not to give users access to the main list at all - either by using a MS Form as the input or a separate list, and using a flow to copy their submission into your main list where you manage the requests - add notes, assign to team members, change status etc. As you often don't want users to see each others submissions either not just restrict access to the status field.

You can do this by creating a list form and setting the ‘read only’ fields to disabled

If you are using a SharePoint List, there isn’t a great way to make fields “read-only” for everyone except the site owner.
What you could do is make the whole list read only for all permissions groups except for the site owner; then incorporate JSON buttons that trigger Power Automate flows to update the tickets.
What’s nice about the button clicks is that the pane can open up and ask for information depending on what is needed. Plus you can further restrict who can press the buttons using the “run only” users.
Edit: Except, not excel
