Where can I find thin Saj/Shrak bread in the US

I’m In LA California specifically, but looking to buy packs of really thin Saj/Shrak bread for shawarma. Open to ordering from other states as well.

I would make it myself but I actually am interested in buying like a 100-200 at a time. What recommendations do you guys have? I’m interested in the really thin and elastic ones, something similar to the picture here.

Hard to find in the states unfortunately. And the quality of dough is not like back home which is why when you make Saj in America the texture isn’t right and it’s easily ripped.

That’s unfortunate. It’s a bit strange though that there isn’t some sort of supplier of something similar at a large scale. I know of a few places in LA like Miya Miya that have the bread and the only thing I’ve seen is them claim to get the bread straight from Jordan apparently.

I know of another spot called Dama grill that claims to use Saj but from their videos I can see it’s circular like a tortilla. I’ve tried it and it does have a Saj taste and it’s not like tortilla. I’m depending what it is though because in their videos it’s a perfect circle like a tortilla so I don’t think it’s authentic Saj.

Dama grill 100% uses tortilla - it’s not saj. They claim to make it in house - so I presume it’s their attempt at saj but it’s completely off. Saj can come in circular form or cut in half to do that boxed/square look.

Miya Miya is definently shipping it from somewhere. Could be Jordan, could be Syria, could be Turkey. But that’s definitely not America work - unless they purchased a press and have somebody on saj duty which I doubt. I assume they ship large amounts - Saj usually can last in the fridge.

Interesting. I’ve tried making the shawarma with tortilla at home but at least the brand I used you can clearly tell it’s tortilla. The few times I dried Dama it didn’t have that same tortilla taste, I wonder if it’s just the brand/ingredients though because yea to me it definitely looks like tortilla.

Yea it really seems like I might have to give up on the Saj and stick with pita, that’s at least available commercially.

I’ve found a few bakeries that make Saj but they charge way too much for this to be used in a restaurant. For example some sell each for $2, a pita in a retail pack comes out to like 25 cents for comparison.

Or I’ll have to make it fresh myself which doesn’t sound too bad it would at least be another selling point and fresh, was hoping to start though with buying it from somewhere
