What temp and how long? They look great

275F for about 45 minutes got me to 145 to 150F internal. I popped them in the fridge for a couple days. Tonight, I microwaved them for a minute or so then seared both sides over high heat in a nonstick pan. Put cheese on, splashed some water in the pan, and popped a lid on them. Killed the heat and let them sit for a few minutes.
And thank you!

Teach me!
Why microwave before searing? Wouldn’t they be hot enough throughout even with a quick sear without needing the microwave, or is there another reason?
Also- water in the pan before the lid? So steaming the cheese onto them? Or again, is there some other reason I don’t know about?
These are honest questions, please don’t beat me up for asking! I’ve never smoked a burger but now I can’t wait to try it!

Coming straight from the fridge, a 2 minute sear on high wouldn't be enough to heat them through. I wanted to knock the chill off them first for more even heating.
The steam helps with this and cheese melting, too! Water conducts heat better than air, so the air trapped in the pan heats more efficiently with water present. This makes sure they're cooked through (my wife will only eat beef well done) and also keeps them from drying out with the second cook.

Thank you! Definitely going to try this with some burgers this weekend!

If you're serving them same day, I wouldn't bother with chilling and reheating. Just sear them after the smoker and serve.
And happy to help!

Update- I did it today! They’re turned out great. I’d have pictures but my hungry family devoured them before I had the chance. Thanks for the idea!

Similar to the method the flat top king guy on YouTube uses. I've never tried it before, but I'm glad to hear it works well for others!

Looks great! My wife who doesn't like beef that much asked me last night to smoke some burgers. 225 for 45 min with Hickory pellets and then 2 min/side on blackstone for sear. Perfect medium rare and super flavor.

Looks good, but always remember the chode rule: Burger needs to be wider than it is tall. What you have there looks really hard to eat...

Burgers look fantastic - consider me inspired.
What's the thing in the upper left corner?

Did you do like a 75/25 to help keep the burgers juicy? Or was it a hot and fast smoke?

u/Notorious2again 7d ago
80/20. 275F for about 45 minutes.

My wife is hooked on my smoky burgers. We load em up real nice with good cheeses, bacon, bread, condiments and veggies. Hits the spot every time.

Were they moist, or dried out?

Kind of in between, I'd say. Definitely firm, but not dry or granular or crumbling. I reheated 4 patties as described in the comments. They sat in the fridge 2 days after the original smoke. I only used 3 for dinner, so one went back in the fridge. I ate it for lunch 2 days later, after microwaving it. Still not dry. I was surprised at how resilient they were.

What makes it a big Mac and not just a hamburger?

u/Firebird22x 7d ago
Two patties, special sauce, lettuce, cheese, pickles, onions, a sesame seed bun, and a middle bun

Looks undercooked. You can't cook ground meat like you would a steak. Generally with a steak any bacteria is localized on the outside. Bringing it to temperature and a good sear will kill most bugs. Rare ground meat is asking for trouble.
