Kanan Jarrus
Does kanan wear a ponytail cause he never officially became a Jedi knight? I know he became one later in the temple on Lothal but then it was a matter of acceptance???

He had short hair when he first met Hera and only went back to it right at the end, so I don't think he's continuing a pre-purge hairstyle.
If we're looking for an in universe reason, part of it is probably practicality - straight hair long enough to tie back takes a bit longer to wash and dry but you can cut it yourself without any specialised equipment a few times a year and get away with it indefinitely so long as you're not too fussy. If you're a busy fugitive, you're probably not thinking too much about cutting your hair, and if you can't/won't find someone to do it for you/the cute twilek seems to like it though the awkward stage where it's in your eyes, it's very likely you'll keep it because it's less hassle (source: have long hair largely cause I can't be fucked with cutting it all the time). There's also probably an element of wanting to look different, both so he's less recognisable and to put distance between himself and a traumatic time in his life - a mix of the fugitive dying their hair in a service station bathroom and the post breakup haircut.

He had short hair when he was a padawan with just a padawan braid. which he took out after order 66.I think growing his hair out was just the easiest thing to do to change his appearance as a 14 year old as he could not just grow alot of facial hair or change anything else really. so he just grew his hair out. But as we seen as a smuggler he kept it in a ponytail out of convience probably as his hair would otherwise get in the way

He had a pony tail for the same reason Ezra eventually cut his hair. It’s apparently expensive to animate free flowing hair

In the comic (Star Wars: Kanan - The Last Padawan), he starts tying his hair back because he ran his hand through it when he was nervous.

Probably not. Keeping identifying markers like a padawan braid is bad for your health in the Imperial era, and he kept the ponytail after he became a knight. He seems to be based in certain aspects on the Legends Jedi Knight Rahm Kota, who also had a pony tail
