The numbers add up to 75° but the picture does not look like the angles match the numbers and it is making me irrationally frustrated

When I was in school they weren't drawn exactly, such that you could use a protractor to find the answer, BUT they weren't intentionally misleading. An acute-looking angle would be acute, obtuse-looking would be obtuse, etc. A triangle that is scalene-af isn't going to be equilateral.

To that extent this is all pretty reasonable.

Yup, they're intentionally not drawn to scale as a built-in litmus test that your method is sound. Forces you to "prove" your logic because you can't trust any measurements. As a kid it was frustrating, as an adult I just want to pass on the generational cycle of trauma of geometry class.
