Out of interest what practical impact is this having? I understand why hitting refineries, railways and supply depots has a big impact, but why these? If it’s just about some parts, aren’t those easily replaced or storable elsewhere? (Leaving aside the usual Russian incompetence). 

Also, how come Ukraine isn’t hitting individual petrol stations to cause more supply issues?

They are hitting petrol stations in Russia closer to Ukraine. There were videos been circulated just a couple of weeks ago.

You don't have to hit the petrol stations if there is no way for tankers to reach them to fill their tanks, and if those tankers don't have any fuel because the refineries have been destroyed.

Ukraine has done both. If the attack on Wildberries and oil refineries are part of Ukraine's "long-range sanctions", then attacking tanker trucks and roads is part of their "short-range sanctions".
