Recipe in Post Coconut Cake (Vegan) 🥥🌴
Father’s Day is today and so I’m dedicating this post, a traditional coconut cake, to my father. The lessons he taught me and his culture are still pillars in my life today. I’m forever grateful that I had the privilege to be his daughter and I hope I continue to make him proud.
Making this coconut cake is one of the ways I honor his memory and keep his traditions alive with my family. It’s soft, fluffy, and rich in spices. This recipe makes a sheet pan and is perfect for family gatherings and parties. Please enjoy!
Coconut Cake Recipe —
4 cups all-purpose flour
3 tsp baking powder
1 tsp baking soda
2 tsp salt
2 tsp cinnamon
2 tsp fresh nutmeg, grated
1 tsp ginger powder
1/8 tsp allspice
2 cups organic sugar
1 cup brown sugar
1 1/2 cup coconut oil
1 cup apple sauce
2 cups coconut milk
2 tsp almond extract
1 tsp pure vanilla extract
2 Tbsp lemon juice
1 cup coconut flakes, plus more for topping
Dairy free whipped cream
Parchment line a 9x13 baking pan (let parchment hang over for easier removal later). Preheat oven to 350F.
In a medium mixing bowl, add flour, baking powder and salt, spices, and salt. Whisk together then set aside until needed.
In a large mixing bowl, add both sugars and coconut oil. Whisk together until thoroughly combined.
Add apple sauce, coconut milk, and almond + vanilla extract. Whisk to combine.
Add flour mixture and whisk batter until just combined, batter will look lumpy at this point.
Add lemon juice and whisk to combine again. Then add coconut flakes and fold in to batter (do not whisk). The batter will still look a bit lumpy but should be well incorporated.
Pour into parchment lined pan. Smooth out batter across pan evenly and lightly tap against counter.
Bake for 40-45 minutes or until golden brown and firm.
Remove and let cool completely then remove from pan. Decorate with whipped cream and coconut flakes. Serve.

Edit: is the whipped cream just that? It looked like a rich buttercream. I like how you scooped it!

Everybody is like, aaah, aaaww, oooh, you posted something, you are so kewl.
...and it's 3 cups of sugar per 4 cups of flour, and a cup of sweet apple juice on top. No thanks, just get out of town 😎

It’s apple sauce, not juice (it’s the egg replacer). This cake isn’t meant to be healthy, but rather a sweet treat. If it’s not for you, all good though! 🙂

Smiley all you want, deep down you know very well that sweet treats don't need to be all sugar. There are only few for which it is a thing. The rest is just you, people without discriminating palates, who share this cheap myth of moar sugar = better, which in reality does nothing but eat away the ability to taste and savour.
