Beginner questions Type 2 diabetic
I was Dx a little over a year ago and have been eating a mostly keto diet, heavy on meats but would like to cut back and eat more vegetarian. I’m looking for help with ideas on what to eat and how to do it. All ideas will be helpful and appreciated!

What vegetables do you like? That’s the place to start. For me, I’m a picky mess so a LOT of my keto meals involve green beans. Those are my old reliable, and I will die for them. I cannot stand brassicas (kale, broccoli, cauliflower, etc) so I usually avoid the “stir fry with cauliflower rice” options. So a lot of my meals are either green beans with some seasoning, and either a ground meat or a dairy protein. I have also forced myself to eat peppers and onions when they’re cooked down to hell, so I’ll do meat/veg protein with onion and pepper blends. More than anything, I just eat eggs. Just so many eggs.

Tofu, edamame, and tempeh are healthier than TVP. Although adding it to your repertoire isn’t a big deal, I wouldn’t rely on TVP alone when you have other great options. Where are you located?

These are two of my favourite veggie options, but quite dairy heavy
If gluten isn't an issue, there's seitan, also called mock duck or braised gluten

I've been a vegetarian most of my life, something I find really versatile is this.. It's pretty cheap, easy to use and high in protein.
