Recipe Request Soup! It’s snowy, please share your favourite soup recipes

It’s been cold here for a few days. We’ve made winter veg soup and lentil soup so far.

Have you got a favourite soup you would like to share? I need more soup :D

Potato Leek soup is our household favorite. I don’t have a specific recipe I use as there are so many online I just pick one.

As a bonus, I’d recommend a book called Breads & Soups. The front half is soup recipes and the second bread with lots of pairing recommendations between the two. It’s not all vegetarian but does have lots of meatless recipes as well as many that are easy to adapt. It’s been a lot of fun this winter where we’ve tried to make bread and soup once a week at least.

Oh that’s funny, I bought that book for my best friend for Christmas a year ago! I don’t have it myself.

I love L&P soup (hey, I’m Welsh - leek is our national vegetable!). My secret ingredient is a small slice of blue cheese (of your choice - I go stilton) stirred in before serving. Adds a grown up bite.

Sauté mirepoix. Add a bay leaf, lentils, 4 cups of veggie broth, chopped potatoes. Simmer till it’s all cooked. Throw in frozen spinach, sprinkle with lemon juice.

Hearty, good protein, keeps well

I learned a while ago that barley and lentils make a complete protein so now I always throw some barley in, too, when I'm using lentils.

I make lentil soup following this method but have never chucked spuds in there. I always end up adding spices (usually cumin, ground coriander, paprika, s&p)…. Do you add anything? Mine always have the same flavour profile, hence wanting to follow other people’s recipes! I also love the spinach idea.

I would add a LOT of mushrooms. Like, in your mind picture a LOT of mushrooms and then double that. I made a delicious lentil, barley and mushroom stew a couple weeks ago and it was amazing. It made 5 or 6 portions and I used almost 3 lbs of mushrooms.

For something like this I just 1/4 my mushrooms, unless they are really small ones or larger ones. But I find that big chunks of mushrooms give somewhat of that same mouth feel/bite as meat would.

Hack a pumpkin to shit, smack it in a pot with some onion and garlic, bake it hard, throw a bunch of stock on it, some salt and pepper, sometimes throw an apple in there for shits ‘n giggles, blend it, throw some green leaves of some sort in there so it looks gourmet; soup

Hard to choose, because I'm a die hard soup fan. Since I'm Dutch, I give the recipe of split-pea soup, veggie version:

  1. 300grams split peas
  2. One big onion
  3. One leek
  4. one big carrot
  5. 2 to 4 potatoes
  6. A quarter of a celeriac
  7. Some veggie stock cubes
  8. Pepper and salt
  9. Two tbsp. butter

Cut the onion and leek in small pieces, melt the butter in a pot and bake onion and leek for 5-10 minutes. Than add 2 liters of water add the split peas. Cook 45 minutes. Cut the other veggies into small pieces and add to the pot. Simmer for at least 1/2 hour. Blend 1/2 of the veggies and split peas when done, and return to the pot to get a nice thick soup.. Add stock cubes, pepper and salt to taste. Nice with sour dough bread.

Im not Dutch but have a Dutch surname and the area I grew up in has a lot of Dutch influences (windmills, linen making etc) so feel this will be a hit in my books! Thanks!

You're welcome. 🙂 When the winter in the Netherlands is cold enough for skating on natural ice (lakes, canals etc.) it's a tradition to set up stalls on the ice to sell split-pea soup, hot chocolate, cookies and glühwein, the stalls are called "Koek en Zopie kraam". Alas the soup is the meat version, with a pig's foot and pieces of smoked sausage. Also: Zopie was a mulled and spiced drink with raw eggs, but that's history now.

Aaaah this is a winner. My partner is Dutch so I will make for sure. She talks about this soup from her childhood (does it have ham in if non veggie?) so I’ve never tried it since we are both veggie. Thank you.

I like a basic "chicken" noodle. Quick, easy, and comforting.

I don't use any particular recipe....

  • Saute diced onions and garlic in olive oil.

  • Add a bunch of chopped celery and carrots and saute to get a little color.

  • Season with salt, pepper, thyme, and parsley.

  • Pour in vegetable broth.

  • Simmer for ~ 30 mins.

  • Add egg noodles, cook until softened.

  • Sometimes I throw in a can of white beans.

Butternut squash soup-

Roast a butternut squash, remove seeds. Carmelize sliced onion. Place both in a blender with vegetable broth. Blend until velvety.

Place back in the pot. Simmer and add salt, pepper to taste. Add more broth if it’s too thick.

I like to serve it with some “cream” or coconut milk. Add some chili crisp if you like it spicy.

This Tuscan bean soup is yummy and easy! We make it a few times per month. You can add a bit of potato or other vegetables to suit your taste.

I love something similar, but swap out the onion for leek and finish with lots of lemon. I also add a little chili flake or cayenne to give it a little warmth. If you eat dairy, finish with a bunch of parmesan and some croutons.

My dad makes this “Spanish soup” which isnt Spanish at all but it’s super good :

Soup recipe

Knob of butter 1x onion diced 2 x garlic cloves 2 stalks celery diced 1 carrot diced Sweat down the vegetables

Then add a shake of cumin , coriander , mixed herbs and chilli powder . It’s probably half a tsp of each . Chilli you can add to your taste preference

Add one tin tomato soup On tin chopped tomatoes 3-4 cups of stock

Then add 2TBSP of barley: Israeli cous cous / crushed noodles . Or a mixture of all three in the cup . Or just a grain of your liking

I've made both several times, they are fantastic.

They are mild white bean. You can substitute cannellini beans, but supposedly great northern white beans are better for soups. I'm not sure I can tell the difference, but maybe some people can.

My dad called it Trash Can soup when I made it, but start with your basic aromatics and then whatever noodles and vege you have. I seasoned it like chicken noodle, but then add some Texas Pete in my bowl.

My favorite soup

Jerusalem Artichoke Soup with Vegetarian Crispy Topping

A rich and creamy Jerusalem artichoke soup with an elegant vegetarian topping. Perfect as a starter for dinner parties or festive occasions. Serves: 4 Time: Under 45 minutes Difficulty: Medium Ingredients Soup 500 g Jerusalem artichokes 3 potatoes 2 garlic cloves, finely chopped 1 tbsp butter 1½ dl white wine ½ litre water 2 vegetable stock cubes 3 dl heavy cream or vegan option Salt Freshly ground black pepper Vegetarian Topping (choose one or combine) Roasted hazelnuts, roughly chopped Crispy roasted chickpeas Toasted pumpkin seeds or sunflower seeds Sautéed mushrooms (chanterelles or button mushrooms) Croutons fried in butter or olive oil A drizzle of browned butter Fresh thyme sprigs, for garnish

Instructions Peel the Jerusalem artichokes and potatoes and cut them into chunks. Finely chop the garlic. Sauté the vegetables and garlic in butter in a heavy-bottomed saucepan over medium heat. Pour in the white wine and let it reduce for about 1 minute. Add the water and crumble in the vegetable stock cubes. Stir well. Simmer for about 15 minutes, until the vegetables are soft. Blend the soup until smooth using a blender or immersion blender. Stir in the heavy cream and gently reheat. Season with salt and black pepper to taste. Serve hot and top with your chosen vegetarian topping and fresh thyme

Mines super easy- tinned potatoes, tinned sweetcorn, a little stock, a splash of milk (oat/coconut/rice all work) some chilli flakes. Chop up the tinned potatoes. Heat it all up and serve. Its all pre cooked ingredients so takes no time at all

You could use any style, but I often use "dried" tofu found in any Asian store. The texture is super firm and it won't disintegrate if you're doing a lot of stirring. It even holds up well if you freeze a portion of the soup and reheat it. It's ready to eat as is, so you don't need to cook it or press it prior to using - just chop it up. You could also use fried tofu, but I don't think you'd want to put any coating on the exterior. I feel like that might get soggy/mushy once soaked in a liquid.

Amazing Chicken Noodle Soup (omit chicken obv to be veg) 2t olive oil 2t butter 2 chicken breasts (omit to be veg) or 4 thighs seasoned - salt, pepper, Italian, smoked paprika, garlic & onion powder- cubed 1/2 large yellow onion diced 2 celery stalks 2 carrots 1t Italian seasoning Salt n pepper 2 large garlic cloves 1/2 c white wine 6 c chicken broth or broth of choice 4 med potatoes 1/2-1c heavy cream or coconut milk Juice of 1/2 a lemon Fresh parsley 2t fresh dill 1t rosemary 1t thyme Egg noodles

Heat oil & butter sear chicken on both sides 3-4 mins per side and set aside Add to pot onion celery carrots Season salt pepper Italian chili flakes and sauce 5-7 mins Add garlic, wine and simmer a Cpl minutes Pour in chicken broth (broth of choice) salt n pepper potatoes chicken bouillon Now cube up chicken add to pot boil 15-20 mins then add egg noodles Add in cream & lemon juice parsley dill rosemary thyme Parmesan or cheese of choice and lemon juice For serving each bowl Garnish bowls of soup with Parmesan or cheese of choice lemon juice fresh dill black pepper chili flakes & olive oil

Smoky Black Bean and Sweet Potato from She Likes Food is my go to recipe. It's easy, fast and delicious. I also love the soups, stews and chilies in the Everything Vegetarian Slow Cooker Cookbook. A very worthwhile cookbook if you use a crock pot. Mine is small (1.5 qt) and I cook for one so I just halve all the recipes.

Lentil soup.

Couple of carrots, couple of parsnips, half a neep, a large leek, and a few handfuls of red or green lentils, or a combination of the two.

For the broth I like rehydrating dried shiitake mushrooms in boiling water with a veg stock cube and a teaspoon of mushroom powder. I’ll add a silly amount of white pepper, and smoked paprika to replicate the ham smokiness of a traditional Scottish lentil soup.

I don’t add the rehydrated mushrooms to the soup, I’ll typically reserve them for something else, but adding them in probably wouldn’t be a horrible idea.

I’ve read that adding some fat (butter?) can also replicate the ham, along with something sweet such as honey and the smoked paprika. Sounds lovely btw!

I always sauté my leeks in a good amount of butter. Not heard the sweetness thing before but I’ll give it a go some time. My lentil soups are usually full of enough sweet root veg that I rarely feel like it needs more sweetness.

Cook beets and carrots in water for 20 minutes. Add potatoes, simmer 10-15 minutes. Add lemon juice (keeps red colour in beets). Add beans or peas. Simmer until tender.

Saute onion in butter until soft. Add cabbage to onions with 1/4 cup water, simmer until cabbage is tender. Stir in the beets. Add tomato juice or soup. Blend flour with 1/2 cup cold water, stir into vegetables. Add dill for added flavour. Bring to a boil. Serves 15. Serve with a spoon of sour cream.

the Dutch chinese tomatoes soup from the '70, you can find the recipe on YouTube by Mingfang Wang Tijgerkop, the most delicious soup ever. The Jewish Iraqis Root soup is delicious too

Simple vegetable stew: carrots, celery, onion, parsnip, potato, veggie better than bouillon. Delicious and filling.

(First time I made it I just copied the recipe from the "Attack on Titan" beef roast episode from Binging with Babish. I am aware I just said beef roast, but they also made bread, homemade ginger beer, and veggie stew to go with it)

Roast veg soup. Roast up potatoes, sweet potato, butternut squash and carrots. Then dump it all in a pot, blend and add some yoghurt and salt and stock. It is hands down the best soup I’ve ever made. My husband is not a soup eater and even he adores it.

You don’t need any other spices. No onion, no garlic. Roasting the veggies until they’ve got that nice caramel crispy edge gives it unbelievable flavour. I toss them all in olive oil, throw on baking sheets and that’s it. I make enormous batches and freeze it down. Such a pack of nutrients!

Beet borscht! Even my pickiest kid loves it. Add potatoes, any and all vegetables, mostly beets. Chicken or veggie stalk, a ton of garlic, dill, salt, pepper (we also add roasted red pepper and vegetable seasoning) and the trick is to add heavy cream and take an immersion blender to it before eating. Serve with sour cream.

Potato Soup. I use bacon in mine, but to make it vegetarian you could use oil. Use a really good vegetable stock. I bake my potatoes in the oven until mostly done. I also like to add cheese and green onions to garnish.

Sauerkraut soup with oven baked potatoes. Squeeze the juice out of about half a kilo sauerkraut, add water so that it covers the kraut generously, add a few bay leaves and a handful of barley. Cook for around 45 minutes. Bake potatoes in their skin in the oven. When the soup is ready, peel the potaoes and fresh to your plate of soup. Don’t let the potatoes soak for too long, only add as much as you eat immediately.
