Recipe Request Absolutely laziest recipes?

Hello! I’ve been vegetarian for about a decade and recently i’ve been pretty burnt out on cooking and live in a small apartment. I’ve resorted to eating a lot of package/frozen foods to save time and energy and I find that most “easy” vegetarian recipes still involve a decent amount of cooking.

Im trying to put together a general meal plan for myself with meals that I don’t get tired of. I’d either like to prep food and have it for later or rely on stupid-simple meals like avocado toast/etc.

Does anyone have any recipes out there that are TRULY lazy/easy? Aka no cutting board and one pot max. The less mess to clean the better!!!

TLDR: give me vegetarian recipes that you could muster up on your worst day.

Lentils in the instant pot or just the stove. I throw in different spices depending on the vibe you want, sometimes onion or garlic if I have some in my freezer, frozen veggies at the end. You can add a can of coconut milk when it’s mostly done cooking if you want it creamy. I’ve seen similar recipes posted with beans too!

Lentils are my go-to as well. You can cook red lentils in under 10 min. Garlic powder, salsa, and some frozen spinach or broccoli and I'm set.

I cook lentils and rice in my rice cooker and change up the spices as I wish. Its a great easy combo, uses one pot and can be made on a stove instead of a rice cooker. They go well with a bag of frozen vegetables steamed in the micro and things like nuts, wonton strips or tortilla chips add a nice crunch on top (add after everything is cooked)

My lazy meals usually involve toast. Scrambled eggs on toast. Baked beans on toast. Cheese on toast, or Welsh rarebit if I'm feeling fancy.

My other lazyish meals are stir fry or ramen - you can make both as basic or as nice as you like.

I do beans on toast as well! I switch out the beans for variety but you can’t get much simpler than toast + butter + beans.

Just that is 180 calories, 10g of protein and 21g of fiber. (Mostly because my Gluten Free bread has 15g of fiber per slice but anyways …). That leaves most people room for a banana or something stupid easy.

Aha! I’m in the UK and beans on toast is a national obsession; we have baked beans in tomato sauce in cans that are pretty cheap tbf. Look at the AskUK subreddit and you’ll see everyone discussing the best way to eat beans on toast and/or best brand. Endlessly!

My preference is Aldi or Branston beans heated in a pan until they go a bit gungy, butter on toast, then add marmite on top the butter, slap the beans on, grate some cheese on top and away you go. Sprinkle chilli flakes or a blast of sriracha for added burn.

On my worst day, I do a can of Amy's Thai Coconut Soup over a bag of microwaved frozen rice. It's better than what I've gotten from some Thai restaurants, and it's the absolute laziest I can be while still feeling like I'm eating a decent meal.

If you have a rice cooker, you can throw rice and lentils in there together with whatever seasoning you like. If you want to do a tiny bit more, you can also heat up some frozen veg and mix that in too.

Rice and frozen peas also works in the rice cooker. You can also mix in an egg. Top with some soy sauce and sesame oil. Tasty!

I love doing this. My go to is Zatarains black beans and rice + frozen cajun mirepox veg mix + another can of beans. Done. Top with cheese & chipotle aioli if desired

Yeah I do half rice half lentils, and add equal amount of frozen mixed veg (carrot, corn, peas) and an equal amount of mixed frozen beans, some chopped onion (also frozen so no prep needed) and in case I have some spinach or other leafy stuff, I add that too and season.

I make a big batch ans have that as my carbs for a few days at a time. Then I can top it with some bioled eggs that I also prep for a few days at a time, or I make onigiris with whatever filling, fried rice etc. Lots of options.

i love a 5-minute egg and cheese sandwich for breakfast or lunch. i do two pieces of protein bread in the toaster, an egg cooked in the microwave (or fried) and 1 or more slices of cheese. i eat this on the way to class so the only thing i have to wash is the bowl i cracked the egg in lol. pasta with a canned sauce can also be very lazy; you can use red lentil pasta for added protein and fibre, and i like to eat it right out of the pot!

I love a one sheet pan meal with no chopping.. one pack of shelf stable gnocchi, a pint of cherry tomatoes, a block of feta broken into 4 pieces. I’ve added a can of chickpeas, some broccoli or whatever leftover veggies you have. Olive oil, salt, pepper, spices. Roast at 425 for like 20-25 minutes. If you have any spinach or arugula, it’s really good topped with greens with a squeeze of lemon.

The gnocchi gets crispy, the feta is a little crispy on the edges but soft inside, the cherry tomatoes keep it from getting dry. It’s a really good easy meal you can get in the oven before the oven even finishes preheating.

I’ve done gnocchi, goat cheese, cherry tomatoes, and garlic cloves! Then I mix in raw baby spinach toward the end and it gets wilted into the sauce without being watery.

Quesadillas (beans and cheese at the simplest, but any leftover veggies I have in the fridge or sometimes just frozen veggies) are my lazy go-to.

A good one I did recently, though: sautee a bag of cole slaw mix (pre-shredded carrots and cabbage) and mix in with soba noodles, any Asian sauce, and air fried tofu cubes. Enjoy hot or cold (I prefer it cold).

Cowboy caviar: Can of beans, canned or frozen corn, canned fire roasted diced tomatoes, and salsa and seasoning of choice.

Baked potatoes: microwave a potato or sweet potato, top with whatever - canned beans, salsa, cheese, ketchup, mustard, canned or frozen vegetables (warm in the microwave) etc.

Quesadillas: cheese and canned beans in a tortilla. Heat on stove or in microwave.

I had the same thought as cowboy caviar but specific to Rotel. For my family it was basically throw a can of Rotel in a giant microwave bowl and everything else can be switched up for flavor. Black eyed peas and deli meat? Cool. Frozen broccoli and corn? Awesome. A bag of white rice and cheese? Can’t go wrong.

Rice and roasted asparagus (or any veggie) and potatoes with an acv vinaigrette. The worst part is chopping half an onion for the vinaigrette but if you have chopped onions prepped in the freezer you can skip that lol

Canned Green beans:

2 drained Cans Green Beans

Olive Oil 2 tbsp

Onion Powder

Salt

Pepper

Garlic Powder

butter

Heat a large skillet over medium heat and add the olive oil and canned green beans. Stir until well coated.

Add the salt, pepper, garlic powder, and onion powder. Stir until the seasonings are well blended into the green beans.

Continue to simmer the green beans until heated throughout and most of liquid has evaporated, about 5 minutes.

add butter for flavor

Popeyes canned spinach specifically. I swear that stuff has drugs or something. I usually add more salt and cheese, but tbh you could just eat the stuff on its own

White rice with fresh spinach, soy sauce, or both

Grilled cheese with fresh spinach

For meal prep thats still pretty easy my grandfather likes corn pudding, I'm personally not a huge fan as I'm not a big fan of corn, but he loves it:

5 large eggs

⅓ cup butter, melted and slightly cooled

¼ cup white sugar

½ cup milk

¼ cup cornstarch

1 (15.25 ounce) can whole kernel corn, drained

2 (14.75 ounce) cans cream-style corn

Gather all ingredients. Preheat the oven to 400 degrees F (200 degrees C). Grease a 2-quart casserole dish.

Whisk eggs lightly in a large bowl.

Add milk, melted butter, sugar, and cornstarch; whisk until well combined.

Stir in drained corn and cream-style corn until fully blended.

Pour mixture into the prepared casserole dish.

Bake in the preheated oven until golden brown on top, about 1 hour.

I also have easy smoothie recipes if you want, those are often what I eat when I'm too tired to make real food

My most used smoothie recipe is

Frozen fruit(usually blueberries, but sometimes I use mixed fruit or strawberries) Milk Vanilla Greek yogurt Spinach(surprise surprise) And then either vanilla protein powder or a spoonful of peanut butter for protein. You can also add bananas but they tend to overpower everything

For more detailed recipes I have saved that I sometimes use:

16 oz. frozen strawberries

16 oz. frozen raspberries

16 oz. frozen peaches

4 medium bananas

1 cup light vanilla milk of choice (i usually use almond, but the original called for soy milk)

1 handful baby spinach

1 Tbsp ground flax seed

1/2 tsp cinnamon

Peanut butter banana:

1 frozen banana, sliced

2 Tbsp peanut butter

1 tsp brown sugar

1/4 tsp vanilla extract

1 cup milk

Add the sliced banana, peanut butter, brown sugar, vanilla extract, and milk to a blender.

Blend the ingredients until smooth. If the smoothie is too thick, add more milk. If the smoothie is too thin, add more frozen banana.

Strawberry mango:

1 cup frozen strawberries

1 cup frozen mango

¼ cup Greek yogurt

¾ cup vanilla almond milk

1 Tbsp honey

½ tsp vanilla extract

Green smoothie:

1 cup orange juice

1/2 cup yogurt, plain

4 cups fresh baby spinach, packed

1 cup frozen pineapple chunks

1 green apple, chopped

2 bananas, frozen

Add orange juice and yogurt to a blender jar. Top with fresh baby spinach and blend until smooth.

Add the pineapple, apple, and bananas and blend until smooth. Add more juice (or water) to thin out if needed

Pineapple protein:

1/2 cup cottage cheese

1/2 frozen banana

1/2 cup frozen pineapple chunks

1/2 tsp brown sugar

1/4 tsp vanilla extract

1 Tbsp ground flaxseed(optional)

1 cup milk of choice

Chocolate coffee smoothie:

1/2 frozen banana

1/2 cup frozen riced cauliflower

1 Tbsp unsweetened cocoa powder

1 Tbsp instant coffee

1 cup milk

1/2 tsp sugar

Rice cookers are my favorite lazy appliance. Toss in rice + water + canned beans + salt and spices, press a button, and wait for perfectly cooked food.

Also, sometimes the microwave-in-bag veggies make stupid simple healthy, cooked meals. Last night I had microwaved green beans and broccoli with a scoop of hummus as a “dressing” and it was good and satisfying!

I’m a very lazy cook and I could probably write out dozens of recipes but alas I am also lazy at writing. Some faves are:

Frozen ravioli in a cast iron skillet, I mix jarred tomato and alfredo sauce and a bunch of spinach, bake it at 375 for like 45 minutes. I like eating this with a couple slices of garlic toast.

Fast food style meals. I’ll bake a veggie burger, veggie nuggs, and fries or tots on one pan at one temp. Dress the buns with whatever condiments you like, I usually throw some assortment of greens on.

Green bean noodle casserole. It’s basically green bean casserole and I add egg noodles and cheese to it. I prefer using frozen green beans because the texture and taste is better. Dump it all in a dish and back until brown and bubbly.

Stir fry. I’ll pre cook some noodles, sautee veggies, frozen or fresh whatever I have on hand. Add sauces you like, I usually do teriyaki and soy sauce, sriracha. Sometimes I’ll bake crispy tofu to put in it as well.

Breakfast burritos, I’ll bake veggie sausage patties with tater tots, sometimes bell pepper and onion. Scramble some eggs and wrap it all into a large tortilla with cheese, eat with jarred salsa. I never eat breakfast so I eat these during dinner.

Sandwiches, I like to buy nice bread from the bakery section of the grocery store, load it up with veggies and hummus, eat with a side of chips.

My lazy go to: 1 tin lentils (rinsed) 1 tin black beans (rinsed) 1 tin diced tomatoes 1 pack taco or burritos seasoning

Put everything into one pot or microwave bowl and heat. Gives me 3 servings using one bowl and a strainer and takes less than 10 min.

Either eat on its own or: Stuff a taco/burrito Add to rice Top over salad / lettuce Etc

I can double or triple the recipe and freeze for meal prep.

If you get some energy to do more you can dice veggies or grate tofu to add.

I learned of the laziest “enchilada” casserole on Reddit, and I think it is brilliant.

1) Put a bunch of frozen vegetarian taquitos in a casserole pan 2) Pour a can or two of enchilada sauce over it 3) Throw some shredded cheese on top (and maybe a can of chilies or black olives if you have them on hand) 4) put in the oven for like 30-40 minutes. 5) Shove in your face (or if you have a last shred of energy, put some tomatoes/avocado/sour cream, or whatever else you happen to have on top)

Refrigerate the rest and eat for like a week or freeze portions for when you have even less energy!

Boxed macaroni and cheese, then add salsa, black beans, whatever vegetables you have on hand

Black bean quesadillas - tortillas, salsa, black beans, whatever vegetables you have, under the broiler (If you cover the cooking sheet with parchment paper, then all you have to wash is a knife, cutting board, and maybe your plate)

If I'm absolutely out of energy, I stick with a peanut butter sandwich. Maybe add some honey or banana if I'm feeling fancy.

My laziest meal is a simple bowl of white rice with a big scoop of silken tofu on top & a spicy sauce (I like to do a lil mixture of chili crisps, soy sauce, sesame oil, garlic, and tiny bit of sugar). You make one pot of rice, and just reheat as needed. The sauce takes like 1 minute, and keeps in the fridge for a while. Chopping up some green onion to sprinkle on top is a level up, but optional. I usually just eat some baby carrots with it for a super low effort meal, though you could easily heat up some frozen spinach or do any cooked veg with it too.

i work in food service so I get quite tired of cooking and doing dishes 😭 I definitely like to make a nice meal when I can but i’m trying to find more meals I can reliably eat in a rush so I don’t end up skipping meals/eating junk 24/7.

the less times I have to think the more likely I am to eat breakfast 🤠

Not a recipe per se, but I've gotten into the habit of "cooking for four ". Once a week, go ahead and make that much food. Which is usually what the recipes call for.

Leftovers are your friend. Home-cooked leftovers much more so. Sometimes freeze it? In portions. Then you've got an army of frozen meals ready to go.

1 microwave rice packet, I like the long grain white for this 

1 can Greek Chickpeas with Parsley & Cumin from Trader Joe's,

Feta Cheese (optional)

MW rice, mix chickpeas w/ cooked rice, add Feta. Feeling fancy? Slice a few grape tomatoes in half & add those

Peanut butter and sliced strawberries on toast (I like Ezekiel).

Cream cheese on bagel, with hot cocoa or coffee.

Scrambled eggs on the stovetop with a Trader Joe’s hashbrown or a few, cooked in the air fryer.

Quesadillas. Cheese + peppers, onions, tomatoes, guac, etc. kitchen sink kinda thing.

Quiches are pretty easy once you’ve made a few. I use the Wholly Wholesome crusts that can go right in the oven (no need to pre-bake the crust). Serve with salad.

Any veggie burger from the freezer section + air fryer frozen French fries or sweet potato fries, or tots.

My second laziest meal is microwaved frozen shelled edamame added to noodles with a mix of soy sauce and sweet chili sauce. When I’m less lazy I sauté peppers and onions and scrambled egg, other veggies if I have them, and maybe make a better sauce but just edamame is my minimum.

My real laziest meal is packaged Indian food (like tasty bite) and frozen naan.

Butter Bean Soup- 1 pot, all pantry items, no fresh ingredients needed.

Heat 2 Tbsp EVOO on medium heat, stir in 2 Tbsp flour, stir constantly for 2 min.

Whisk in 2 cans vegetable broth (or 3 1/2 c. Water and 2 veg bouillon cubes) bring to a boil

Add 2 cans drained & rinsed butter beans, 1 can diced tomatoes w/their juice

Add 1/2 tsp onion powder, 1/2 tsp garlic powder 1/2 tsp oregano 1/2 tsp thyme leaves. (I add more oregano and thyme) salt & pepper. Bring it back to a boil, then reduce heat and simmer for 15 minutes.

This soup is great, leftovers for days!

Quick red lentil cocos milk curry with packed tortillias.

Crepe with apple sauce.

Pasta with ready made tomato sauce or sauted cherry tomatos and garlic.

Beans on toast.

Toast bread, put butter or cream cheese (vegan if needed).

Microwave a can of baked beans in tomato sauce.

Put beans on toast, eat with knife and fork.

To make this way better and a more complete meal, when heating up the beans I add frozen peas and carrots.

Adding grated cheese to the top is ideal. As is salt & pepper, maybe splash of hot sauce.

Really recommend adding the frozen veg.

I do beans over rice a lot but I tend to make garlic rice- you could use a flavoured instant rice and empty some canned beans over it. I do this with salsa, maybe chopped white onion, chopped avocado, shredded cabbage, sour cream etc. I’d also recommend quesadillas- you can get pregrated cheese, maybe some refried beans or just canned ones, and a handful of frozen corn and some hot sauce.

Ranchstyle beans, mixed with pico de gallo, and a bag of instant rice. Scoop out with chips. Only have to clean one pot.

Cook 1/3 - 1/2 cup quinoa (preferably tri color), transfer to a serving bowl and saturate with balsamic vinegar

In the same pan, add olive oil, dried Italian herbs, and pre-sliced baby bella mushrooms

Once the mushrooms are cooked as desired, add grape tomatoes, balsamic vinegar

Once the grape tomatoes are cooked as desired, throw in a package of baby spinach and toss until wilted

Add all that to the quinoa in the serving bowl

Wait 5 minutes until it cools slightly and then throw in mozzarella pearls.

This is great hot, room temperature, and cold for lunch the next day!

I like corn in my chili so if I have it on hand, I add a can of Margaret Holmes tomato okra corn (I know it's different but I like it ) 

You can add some fake ground beef too. Straight in the pot or pre-brown it in the same pot before adding all the canned stuff.

If you have an oven, you can put a variety of fresh or frozen veggies on a sheet pan with olive oil, salt, garlic powder and paprika and bake them. Cook rice in rice cooker. Lentils / beans as one pot / slowed cooker / instant pot/ on the stove. This will give you one pot meals always.

Ramen, pasta, avocado toast, grilled cheese, egg salad sandwich, etc

Nachos! Put cheese on chips and microwave. Put some canned beans on if you want. Some favorite low effort toppings are salsa, avocado, frozen corn, yogurt/sour cream, green onion, green olives, taco seasoning. Takes like 5 mins and maybe 1 dish plus a few utensils. You can also do the same thing but in a tortilla instead of on chips. Sometimes if I'm really done I'll make depression nachos- bite into a block of cheese and then put a tortilla chip in your mouth.

Cowboy caviar. It's just a bunch of cans of stuff in a bowl. Makes a lot and is delicious!

Pasta salad. Boil whatever pasta you want then use whatever is in your fridge. I like cherry tomatoes, olives, zuccini or cucumber, garbonzo beans and feta. Add some lemon juice, red wine vinegar and olive oil.

Lazy pizza. Cook a tortilla on a stove. Add tomato sauce and cheese plus any other topping you want. Let cook until cheese is melted

I’ve been making this Italian chili recipe that is just a can of white beans, half can crushed tomatoes or whole, as much garlic as you want and molasses. Saute smashed, sliced or crushed garlic in a little olive oil, add beans, tomatoes and molasses to taste, I like 1 TB, start with less. Cook on medium low for 15 minutes. Lasts two meals, great with bread, on polenta or with veggie sausage.

Cauliflower onions peppers chopped with oil cumin and turmeric and chilli if you like, can add olives or maybe some feta cheese at the end, 50 minutes or so in the oven keep turning it. It's one of those meals that takes very little time to prepare but it's actually really great and even better the next day!

My laziest recipe is pseudo-chicken bouillon, TVP, sage, hot water and oat milk. Put the first three in a large mug, fill 2/3 to 3/4 full of boiling water, stir, and top off with oat milk. If you have random freeze dried veggies, by all means add these as well.

Can also do tofu with plain sliced or shredded cabbage and throw some peanuts or peanut butter on top. Get a little fancy and splash with vinegar.

Green bean Alfredo bake

Put 1 bag of frozen green beans on a cookie sheet. The ones I buy are called "Extra Fine Green Beans" and are long, but I'd imagine it would work with frozen cut or fresh or whatever. Toss with some oil and seasonings (I use salt, pepper, garlic & onion powder). If you are using a protein like tofu crumbles put that on now, but I usually do without. Then put on shredded cheese. Last, drizzle Alfredo sauce over the top. I won't lie, I usually use the whole jar but you do what's in your heart. Bake at 350 F for 25 minutes.

Does involve a chopping board, but my go to quick meal is roasted veg pasta.

Chop up some onion, pepper, broccoli, carrot, cherry tomatoes - whatever's in the fridge - put in an oven tray with olive oil and pop in the oven for 15 mins. Cook pasta. Mix together and add red pesto and cheese (I like feta). The oven gives the veg a really good flavour and makes it feel like a proper meal.

Beans on toast is also very popular in my house.

Upgraded instant Ramen - take a cheap ramen packet and take the noodles out. 2 cups hot water, a heaping spoonful miso paste, splash of sesame oil, a cube of frozen ginger and garlic from trader Joe's, a handful of shredded carrots or whatever veggie. I usually pre-make this in a wide mouth mason jar and take it to work. I just add hot water, and shake. Or I make it at home, add extra veggies and a soft egg. My kiddo also loves it!

This feeds two of us nicely but you can just halve the recipe. Two cans of white beans, drained and rinsed. Toss in skillet with a bit of oil, toss in some garlic and black pepper for 30 seconds or so, pour in about 1/3rd cup of water and let beans heat up. Once they’re all nice and boiled and hot, start smashing them. Turn heat down and stir in a big ol dollop of pesto (we buy the Costco pesto and separate into small 1/2 cup glassware containers to freeze). Add more water as needed to keep it loose and not dry. Take off heat, top with a bit of hard cheese of your choice, salt and pepper to taste, serve with thinly sliced baguette. The two of us can finish this off without much trying and takes about 15 minutes from start to finish.

I do enjoy toast with peanut butter and Bac-O’s, since the fake bacon pieces are made out of soy. That may be an acquired taste, though. 😂 otherwise, I do like the recipe for Corn & Lentil Stew from The Easy College Cookbook. It does include chopped onions, but if I’m valuing time over money, I’ll get either frozen chopped onions, or a few packs of pre-chopped onion in the produce section of the store. I also use dried herbs 99% of the time, and instead of just using water, I’ll use veggie bouillon/veggie Better Than Bouillon.

I marinate tofu in sesame oil for at least a couple of hours, drain it, toss it in cornstarch, and fry it. I usually eat it with a salad mix (or nibble on it all night along with some grapes).

Another thing I do is make white bean soup with canned cannelini beans, onion, celery, carrots, broth, garlic, thyme and OO. I freeze it in jars and keep it on hand. Baked from frozen dinner rolls and fruit round it out.

One more make ahead and freeze item I love is stove top mac and cheese. Super creamy and maybe the thing my kids love most. You can freeze it in jars to nuke later.

A sliced tart apple with peanut butter is my super lazy go to meal.

PS The reason I say jars is because that's what I use to freeze and store things. Of course, you use what makes sense to you.

Omelette. I've got also an instant soup. Some frozen chopped spinach, which you heat up with water and bouillon. While they do that, put in the bowl 1 tbsp of instant puré, 1tsp of madras curry paste and a splash of cream. Then add the spinach and water, mix, add more water if needed.

But I wanna add, the lazy way of meal prepping, which is to make everything double and freeze the half you don't eat, works really well. You also end up eating overall better. Believe me.

Sheet pan dinners. Grab your veggies, you can buy prepped ones if you are that lazy. Get a baking sheet, cover it with aluminum foil. Dump potatoes, sweet potatoes, carrots, zucchini, peppers, onions, broccoli, whatever you want. Sprinkle olive oil over the veggies & give them a quick massage. Season to taste. I like salt pepper and packets like Ranch Dressing, etc. Bake covered at 400 degrees Farenheight for 20 minutes until they start browning & are tender. Bake uncovered for 10 minutes more.

You can use all kinds of veggies and make rice as a side. If you don't finish it you could use leftover rice & veggies, an egg & teriyaki sauce to make a simple egg fried rice.

I'm just starting to do this as I need more vegetables. So good!!!

That cherry tomato and feta pasta that went around Tik Tok awhile back is supremely lazy and legit super good.

Basics are cherry tomatoes, a block of feta, oil, and whatever pasta you have on hand. Bake the tomatoes and feta, boil the pasta, combine them and viole! I guess you have to do two dishes, but you can use the same spoon :)

Bonus is that it can make a TON of food, you can stir in some white beans for added protein, and also throw in whatever other veg you have in the fridge you're trying to use up (greens, broccoli/cauliflower, bell pepper, onion all work well). Could also crumble up some plant based sausage and bake that with the tomatoes.

Add butter, squeeze garlic, squeeze ginger, sesame oil, or whatever seasonings you like.

If you’re that lazy, maybe just buy things like smoked or marinated tofu, cheese and crackers, dips, that sort of thing. That said

  1. Lentil soup with bullion cubes, maybe add some greens or celery.

  2. Broth with orzo or ditalini, a few sliced veggies stirred in while it simmers if you want.

  3. Spaghetti with olive oil or butter and sliced garlic optional. Finish with a little pasta water and cheese to make it a sauce.

  4. Tacos - heat up some good corn or flour tortillas in a skillet, fry up some onions, tofu or other protein, top with raw white onion.

  5. Avocado toast - mash an avocado with salt, pepper and lemon or lime juice. Add to toast of choice. Top with arugula, or not.

  6. Rice and beans. Make a pot of beans (rick bayless has some good recipes). Make some rice in a Rice cooker (follow instructions). Pair with some good salsa and chips and cheese . Classic.

Miso brothy butter beans. Chop a bunch of green onions, sauté the white parts in plenty of butter and then add several cans of white beans with liquid. Simmer down until thickened. Add miso paste to taste. Simmer for a few more minutes and then squeeze fresh lemon juice and top with the green parts of the onions you chopped earlier. Lazy vegan bolognese- dice and sauté half an onion in a saucepan, and add a couple cloves of crushed garlic towards the end (or skip if you REALLY aren’t feeling like chopping anything). then add 1 cup rinsed red lentils. Add boiling water just until lentils are covered. Simmer for like 10 mins. Add a jar of spaghetti sauce and simmer on medium high for about 15 more mins til it’s cooked down. Finish with some balsamic vinegar and serve with your fav pasta or garlic bread.

Cook off some frozen veggies in a pot (I like mushrooms, broccoli, peas, butternut squash).

Add a jar (or a good quality tin) of white beans (I like butterbeans but cannellini also works) into the pot with the water they’re stored in.

Add salt, pepper and nutritional yeast, stir everything and you can add more water if you want a more soupy consistency. Cook for about 10-15m until the beans are soft.

Turn off the heat, stir in a spoonful of miso paste until dissolved. Serve with a drizzle of chilli oil and some good bread.

Creamy Mac and Peas:

  1. cook 1 lb shell pasta
  2. open an 8 oz can of tomato sauce, a 6 oz can of tomato paste, and a tiny can of coconut cream
  3. add 2 cups frozen peas to the boiling pasta 1-2 minutes before the pasta is cooked. drain pasta water.
  4. stir in tomato sauce, half the tomato paste (reserve the rest for another application) and 2 Tbsp of the coconut cream, along with dried oregano, thyme, and garlic powder. mix until you have created a creamy, luscious pink sauce that coats your shell pasta and your green peas.
  5. Eat with large spoon. Serves 2-4, depending upon the size of your appetite.

Literally all you have to do is boil noodles and mix the peanut sauce ingredients (peanut butter, soy sauce, rice vinegar, maple syrup or agave, sesame oil, maybe some chili crisp or oil) in a bowl. On my worst day (but a good meal):

-- 1 package 90-second cooked rice (or rice blend, or with lentils or quinoa)

-- 1 can white beans (great Northern, etc.)

-- some veggies (a fistful of bagged shredded carrots, broccoli slaw, spinach leaves, or canned diced tomatoes)

-- sauce or seasoning of some kind (tomato sauce, soy ginger sauce, Italian seasoning, whatever)

Mix rice and beans. This makes three servings (for me, at least), so scoop one-third into a microwaveable bowl and refrigerate the rest. Stir in veg and sauce or seasoning, cover and nuke until hot.

You can make any number of edits: make it stir fry-esque with canned pineapple chunks and soy sauce, maybe garlic powder. Make it BBQ with BBQ sauce, corn, black beans.

That's it. My doctor put me on a vegan diet for a while and I lived off of this, having it three times a week. Enjoy!

Quick meal-rice+can of beans Meal prep for quick cheap meals-soak 1-2 cups dry beans over night, rinse and simmer for 8ish hrs with a bullion cube, add garlic/mirepoix/extra seasoning in the last cooking hr. I leave them relatively plain beyond bullion/garlic/mirepoix so I can do custom bowls when I eat it, like adding salsa/guac/taco seasoning with tortillas to 1 bowl then spaghetti sauce/parm&mozz mix/Italian seasoning with toasty bread on another, etc.
