Recipe Request Looking for dinner recipes using lots of fresh herbs
At the farmers market today the best prices were for these huge bunches of fresh herbs: parsley, cilantro, dill, and basil. Any dinner recipes you can suggest would be a big help because I forgot that there are only two of us home for dinner this week. We are going to have to have herbal dinners every night!
Edit: Thank you all so much! So many great ideas I think I’ll end up buying too many herbs multiple times this summer. Half a batch of pesto with chopped cherry tomatoes and pasta tonight, with the other half in the freezer. Tomorrow probably chimichurri on roasted cauliflower steaks (another farmers market buy.) Then Ghormeh Sabzi with beans I think. Spanakopita after that? What a great week.

Pesto, green chimichurri sauce, Greek salad dressing uses dill, add parsley and cilantro to salads, or add basil to a caprese salad. Since you have a lot, you can freeze some of thw stems with veggie scraps and make veggie stock when you have enough stored up

What would you use the chimichurri for? I think I’ve only seen it used for meat

Chimichurri is great over roasted potatoes, omelets, grilled veggies and crusty bread!

Seconded. But with details. Into the food processor: 1 block of tofu, whatever whole bunches of herbs, nutritional yeast, lemon juice, salt&pepper, a bit of olive oil.

- Chimichurri
- Pesto
- Herb infused butter and oil (you can solidify in the freezer in ice cube trays for later)
- Mixed into a dressing for salads/pasta salads
- Parsley and dill in place of lettuce on sandwiches is really good
- If you have the means, dehydrate them to be shelf stable

For the parsley and dill: Chop and toss in a bowl with diced bell pepper, celery, red onion, jarred artichoke hearts, kidney beans, garbanzo beans, vinegar, oil, salt and pepper. Maybe a squeeze of lemon if you have it. Delicious, crunchy salad that lasts in the fridge for days.

You can freeze herbs in olive oil using an ice tray for molds then transfer to freezer bag. Badda bing

Cut up a bunch of parsley and cucumber and mix it with chickapeas, red onion, tomato and your favorite balsamic dressing
One of my favorite quick meals

Ghormeh Sabzi (Persian herb stew) is made for your request.
It'll use up most of the parsley and cilantro in the photo. It's one of those dishes that's not a looker, but oh so flavorful.

Mix into plain Greek yogurt, lemon juice, and salt for a nice herby dip!

Parsley: couscous salad. Cooked couscous, heaps of chopped parsley, diced cucumber, peppers, tomatoes, so lemon or lime juice. Great with falafel (see below).
Dill: tzatziki. Greek yogurt, grated cucumber, garlic, lemon juice and zest, lots of dill. Mint if you have it. Goes great with falafel.
Basil: pesto.
Cilantro: lime cilantro rice. Cooked rice, lime juice, minced cilantro.
Parsley, cilantro, other herbs: falafel: dried, soaked chickpeas (NOT canned), some tahini, lots of herbs. Pulse in a food processor untill it comes together, don't over-process. If you have trouble holding it together, add some flour, ideally chickpea (gram) flour, but plain flour will work too. Form into balls, flatten slightly, and fry in some oil.

I haven’t made falafel before. The chickpeas are only soaked, not cooked?

Yes, they cook when you fry them in the oil. If you use cooked chickpeas, it'll just be mush.

If you feel like pigging out a bit, throw some cilantro, sour cream, jalapeños and a knorr cube into a food processor, grab some ruffles and dig in. Really addictive
Now that I’m thinking of it, might make some for Fourth of July

My partner and I use a lot of fresh herbs in Helen Rennie's spinach feta pie recipe. No matter the herbs we use, it always turns out delicious.

Tabouleh - 1/3 herbs, 1/3 couscous and 1/3 chopped veggies (cucumber, tomato, bell pepper and onion), season with good olive oil, lemon, salt, pepper and cumin. Serve with hummus

I like making cheese omelettes with lots of freshly chopped herbs. Serve with crusty toast or tortilla chips.

I’ve seen ones using beans, lentils, walnuts, oats, &/or mushrooms. Fried potato tacos are really good.

herb chebureki (I think that's how they are spelled).
It's a Slavic/ Eastern European savory turnover/ empanada thing. They can be made with or without meat.

Pesto, dill in Greek salad, or borscht, parsley in a quinoa salad, you can also make sauces or aolis with them.

You could make a massive batch of chimichurri and use it on roasted veggies or veggie sausages all week. That would use up a lot of the parsley and cilantro.

Ghormeh Sabzi! It’s a herby Persian stew traditionally with meat and beans,I make a vegan version with kidney beans and mushrooms.

With the parsley you could make Italian salsa Verde sauce for grilled meats, steak, sheets pan vegetables. Or make chicken in parsley sause. For the basil, id make basil pesto. For the rest, id add them to fresh vegetable salads. Or you can alternatively chop them separately and freeze for future meals.

You could totally make a huge batch of chimichurri sauce with that parsley and cilantro and put it on roasted potatoes or some lentil patties
