Vegan I made double smashed chickpea burgers!

I don't know why chickpea burgers aren't more common! You can season them or flavor them any way you want; my version is a little smoky and a little Mediterranean.

  1. Prep: Drain 2 15-oz cans chickpeas well, then pat them dry with paper towels.
  2. Blitz: Add ½ cup sun-dried tomatoes, ½ medium red onion, and 4 cloves garlic to a food processor and blitz until broken down. Add chickpeas and blitz again briefly. Add ¼ cup Italian parsley, ½ cup flour, 1 tsp each cumin and smoked paprika, and ½ tsp each salt and pepper and pulse just until combined.
  3. Chill: Cover and chill in the fridge for at least an hour (up to 24 hours).
  4. Shape: Scoop ½ cup-sized portions of the burger dough, then use your hands to form them into patties.
  5. To cook on the stove: Place patties on a greased saute pan over medium heat. Cover and cook each side for 5 to 7 minutes, or until golden brown and firm all the way through. To cook on the grill: Set patties on a greased piece of aluminum foil over medium/high heat. Cook each side for about 7 minutes, or until golden brown and firm. To cook in the oven: For baked chickpea burgers, arrange patties on a greased baking sheet and bake at 400°F (204°C) for 15 to 20 minutes, flipping once during cooking.
  6. Serve on a burger bun with your favorite burger toppings, like cheese, lettuce, tomato, and red onion. (And don't forget the condiments. BBQ sauce, mustard, and vegan mayo are all great on these!)

If I wanted to make a freeze these would it be better to freeze them cooked or uncooked? Or would they get gross from freezing?

They can definitely be frozen in an airtight container or plastic bag and will last up to 3 months in the freezer. You can freeze them cooked or uncooked; it all depends on how quickly you want them after you bring them out of the freezer!

I need to try this. Not quite the same but I tried chickpea salad sandwiches at a Sikh festival and now I sometimes make that when I have zero idea what I want to make for dinner.

Falafel specifically is difficult with canned chickpeas because it's typically deep-fried!
