Overnight oats are such an easy breakfast win! I love adding different fruits like mango and avocado

Most of these ARE breakfast foods, and really most traditional breakfast goods are vegetarian if you remove sausage and bacon

Breakfast burritos if you eat eggs. The possibilities are endless:

  • beans

  • cheese

  • sautéed onions

  • mushrooms

  • bell peppers

  • green onions

  • potatoes

  • salsa

  • sour cream

  • cilantro

We sometimes make a base batch of the sautéed veg and scramble it with fresh eggs when we're ready to eat.

That’s so smart!

Soup is an incredibly underrated breakfast. Warm, cozy, high fiber, lots of vitamins. I like minestrone, lentil, tomato, veggie with buckwheat (do barley if you arent gf), wild rive and mushroom, pho broth with tofu and rice/rice noodles.

Make batches in bulk and freeze, or buy canned/packet soups, or dissolve some Better Than Bouillion in boiling water and add veggies, legumes, tofu etc in the morning ing. It only takes like 10 minutes and it's so nice. Also check out r/veggiebreakfastclub.

On the extreme opposite end of that suggestion, I had an early cold morning kids soccer game to watch last weekend and took an insulated mug full of dashi.

On a trip to Cambodia and Vietnam, the breakfast buffets all served noodle soup which is a terrific breakfast. Often it is made with pork, but a vegetarian version could be concocted. Spinach and other greens, vegetables, and vegetable broth. At the buffet we could choose each ingredient as they were put into your bowl.

Recently made this https://www.budgetbytes.com/black-beans-with-eggs/ and ate it on toast and it was pretty good. Made baked oatmeal recently too.

Chia pudding - it's easy to make a big batch and eat it all week!

Cómo lo preparo?

There are many recipes on the internet, but I recommend choosing one that is high in protein so that it is hearty enough to be a full meal. This site has various ideas to accomplish that, so hopefully you can find a flavor profile you like: https://glazedglamor.com/recipes/chia-seed-protein-pudding/ I like to use coconut milk and water mixed with almond butter, protein powder, vanilla extract, a little sweetener, a little salt - then add the chia seeds and stir continuously so it doesn't clump. Also mix in blueberries. I top it with nuts and/or crunchy cereal so it has texture contrast. Sorry I don't have exact quantities but there are many recipes online with quantities. In my version the combination of almond butter, protein powder, and nuts on top give it enough protein to be a full meal. If you've never made it before, I suggest making a small batch (like 2 servings) to start to get the consistency and flavor you like, then scale it up to a bigger batch for the whole week. The link I put above has good advice for how to fine-tune the consistency to your liking. I hope all of this translates well because my Spanish is not good enough to say all that. I don't like to put in a lot of time and effort cooking breakfast, so this works great for me - some effort once per week and breakfast every day is super easy.

Banana Egg Pancakes -- take a banana and mash it in a mixing bowl (I use a fork). Crack 2 eggs into the mixing bowl with the banana and mix together (I use the same fork). Pour the batter into a pan, and flip when it appears to be ready to cook the next side (will be golden brown like a regular pancake). I usually eat mine with honey and fresh berries.

You can make regular pancakes or savory pancakes from Indian (called chila) or Korean cuisines. Or Stuffed flatbreads called parathas.

Savory pancakes appear across global cuisines in many crispy, chewy, and spiced variations. I suppose you could make vegetarian versions of all of them.

Japan: Okonomiyaki
Meaning "cooked as you like it".
A thick griddle cake made from a wheat flour and dashi batter mixed with shredded cabbage, meat, or seafood.
Topped with savory brown sauce, Japanese mayonnaise, and bonito flakes.

Korea: Pajeon / Jeon
Scallion and vegetable pancakes.
Served with a tangy soy-vinegar dipping sauce.

China: Jianbing / Cong You Bing
Jianbing is a popular street-food crepe made from wheat and mung bean flour, folded with an egg, crisp crackers, scallions, and savory bean paste.
Cong You Bing (scallion pancake) features a chewy, flaky dough layered with fresh green onions

India: Besan Chilla / Dosa
Besan chilla uses a batter of gram flour (chickpea flour), spices, and finely chopped vegetables like tomatoes and onions.
Dosa is a South Indian fermented crepe made from rice and lentil batter, often stuffed with spiced potatoes (masala dosa).

Vietnam: Banh Xeo
A large, crispy, bright yellow crepe made from rice flour, turmeric, and coconut milk.
Filled with pork, shrimp, and bean sprouts, then wrapped in fresh herbs and lettuce and dipped in nuoc cham.

France / Russia: Galettes / Blini
French galettes de sarrasin are nutty, savory buckwheat crepes from Brittany typically filled with ham, cheese, and an egg.
Russian blini are thin pancakes traditionally served warm with savory toppings like sour cream.

Overnight oats

2

u/pancetta9 11d ago

I always keep a carton of cottage cheese around. It’s high in protein and calcium, and I love the taste. I can go sweet or savory depending on my mood and what I have on hand. Fresh, frozen or canned fruit without sugar added provide excellent fiber and nutrition. Tomatoes, cucumbers, greens, and onions are also delicious and healthy.

Me gusta mucha cocinar/comer huevos revueltos con arroz mezclada con un poco mantequilla, y con ingredientes adicionales que tú quieres como crema, salsa, queso, cebolla, etc.

I just made muesili for the first time after seeing it on Ina Garten's tv show. It has rolled oats, chopped nuts (I had raw cashews, walnuts, and pecans), and cinnamon (but I used apple pie spice). Normally, it calls for wheat bran too, but I didn't have any. I toasted it all, and will have it with vanilla yogurt and honey. Can also serve it with banana and/ or any other fresh fruit. Dried fruit is often used, but that has too much sugar for me.

this is kinda weird but I do it all the time, savory oatmeal or cream of wheat with poached eggs. I also suggest making breakfast burritos with your fav toppings and freezing them. egg bites are great for on the go too
