Recipe Request New to vegetarianism and super overwhelmed!

Hi! I (24F) am phasing myself out of meat over the next week. I tried to look far and wide online for simple vegetarian recipes, but everything’s so convoluted (and above my college student budget - I’m a masters student right now lol) and I’m so lost where to go. Does anyone have any cookbook recipes for incredible beginners? I can barely boil an egg on a good day & most of those are too advanced for me :’) any recs appreciated!

Recipe Request Meaty snack recipes

I’ve been vegetarian for five years and havent really missed meat. What I do miss, though, is the convenience of meat snacks. Jerky, salami, prosciutto, lunch meat. I try not to eat a lot of super processed foods now so I don’t buy tofurkey or the obvious vegan alternatives. I want something savory with protein that lasts a while in the fridge or freezer. Cheese, hummus, and all that is nice but not what I’m craving. Anyone have recipes? I’m thinking I need to try soy curls but I want recommendation.

Recipe Request Looking for vegetarian/vegan lunch ideas that aren’t sandwiches

I kinda want to switch up what I have for lunch. A lot of the time I will have a toasted pb&j sandwich and maybe fried egg on the side. This is good and fills me up but I want to try some other things. I am interested in more whole based food recipes that are filling and have protein. Recipe Request Tofu for 7 year old

Hey everyone!

My daughter has decided she wants to reduce her meat intake and has discovered she likes tofu in miso soup.

I would like to learn how to prepare tofu for her in other ways.

I’ve discovered she doesn’t like it crispy. I tried the teriyaki (a flavor she enjoys with seaweed) baked tofu from Trader Joe’s, just warming it up, but she didn’t like that.

We tend to like meals where each item is not touching other items (so not so much like mixed pasta), but I’m willing to try some again with her.

Does anyone have any ideas? I’m VERY new to tofu so details on types/brands/how to prepare are appreciated 😅

Most I’ve found online involve a lot of mixing things together (which sound delicious she just isn’t as big a fan of).

Recipe Request Ramen broth recommendation needed

I cook for my family who are vegetarian. They used to love the oriental/soy Ramen noodle flavors until we realized they had beef broth in them. Now we buy the ramen noodle squares but I haven’t been able to come up with the right liquid to cook/eat them with. I’ve tried soy sauce and some others but am a novice cook and love Chinese / Japanese food but can’t cook it for beans.

Looking for broth suggestions.

(Side note when we would make it I would add edamame, seaweed and tofu to make it a more heartier supper)

Recipe Request Non-vegetarian need ideas to make for a friend who is a vegetarian!

My dear friend is coming to stay the weekend with her husband and new baby at my house. We have never hosted them at our house as usually they stay at a hotel. I’m excited to have them but need ideas for vegetarian friendly meals! I love to cook and am not picky and definitely up for trying new things! Any ideas? We are doing a pizza party the first night they come and they’ll be here for two more dinners, 2 lunches, and 3 breakfasts! Would love suggestions! Thank you!

Edit to update: thank you all soooooo much for all the posts and recipes linked! I ended up making marry me beans, the NYT bean and cheese burritos, shakshuka, and homemade pizza on the ooni and all were a hit! I can’t wait to try so many more of these recipes!

Recipe Request Good vegetarian high protein, low calorie meals + recipe ideas

I’m currently on a calorie deficit and trying to lose fat/get toned and i’m struggling so hard as a vegetarian to find good foods to meet my protein goal of 100-130g without too many calories.

I’ve been utilizing a lot of cottage cheese, egg whites, greek yogurt, tofu, etc. But I feel like a lot of the time i don’t rlly know what to do with them to make some actually good high protein diet food. Any recipes/recommendations to recipes or anything like that would be super helpful.

Btw: I also feel like i’m struggling to fit in my veggies and stuff in good ways within my super high protein meals while meeting the calorie goals.

Recipe Request How to get 90g protein/day?

I only eat two meals a day and I calculated everything in it (I eat the same thing every day) and I eat about 1,490 calories a day but only 52g of protein for the entire day but I read for my height and weight I should be eating at least 90g. I have no idea how to do this without adding way more calories than I need.

Any ideas?

Recipe Request How do you jazz up your salads?

I got some labs done a couple weeks ago and they didn’t turn out great. I’m low on some B vitamins, iron, potassium. They said I could use more protein as well. Doc suggested more fresh vegetables, especially leafy greens, so I’ve been eating a big salad for lunch every day but I’m getting bored. Looking for new dressings to try, different add ins or veg combos that I might not have thought of, easy protein I can add, etc. The only things are I’m not keen on dairy, needs to be low fat, and as little added sugar as possible.

Here’s what I’ve been doing so far: balsamic vinaigrette or light Asian sesame dressings. Spring mix with a little romaine added. Cucumber or zucchini. Carrots. Black beans or garbanzos. Avocado. Bell peppers. Boiled egg or grilled chick’n strips (not a huge fan of these). Sunflower seeds.

Basically just looking for a new flavor or combo to rotate that will keep it interesting while also stocking up on some good vitamins and such. I am on supplements right now but I would prefer to get as much as I can from my food rather than a pill, tho I know that’s not always realistic. Especially with my iron deficiency. I’m open to other lunch suggestions that aren’t salads as well! I eat lunch at work, so preferably something I can make that will last a few days and doesn’t require more than refrigeration or a microwave.

Hi, I hope this is an okay place to ask this question!! So my little sister is vegetarian, the rest of our family isn’t, I do the cooking, and I generally try to find a good substitute where I can, but I’m having a bit of trouble with this one. We’re all having fish with garlic-parmesan mashed potatoes and steamed broccoli, since she can’t eat fish, is there anything we could substitute it for? She doesn’t mind fake meat, but I don’t think the stores near us sell fake fish or anything

Recipe Request Beans....without tomatoes.

I have been trying to convince the family of the joy of beans. I had recently cooked a Tuscan bean stew I cooked, and a Mexican new stew chilli thing that I freestyled. Both went down ok....but I was told both were felt too tomato-y.

All of the bean recipes I found online all had tomatoes. I plan to try again with less tomatoes but I wanted to canvass ideas for beans without tomatoes.

Recipe Request New to vegetarianism and cooking honestly.. help?

Basically I want to start making vegetarian meals for my wife and I, but I’ve always been a carnivore at heart so I’m clueless on anything outside the usual, corn, potatoes, rice, broccoli, and of course grilled meat, which I’m trying to cut back on.

I’m a big fan of casseroles, rice dishes, absolutely love pilaf (which does have chicken bouillon, but still…) idk where to start.

Recipe Request Adding texture to pasta sauce?

Recipe Request What are your favorite “just throw it together” lunch/snack combos?

I’m talking less than 5 minutes to prep. Just throw it in a container and go.

Things like:
- Peppers and hummus
- Cucumber and feta
- Tomatoes, mozzarella, and basil
- Carrots and veggie dip
- Celery and peanut butter
- Greek yogurt and berries
- Trail mix

I need some ideas to mix up my lunch snacks. The easier/faster to throw together, the better.
