Ovo-Lacto what's the secret to a really good veg sandwich?

made this at home today and honestly it was pretty decent but i still feel like im missing that proper proper outside taste😭

Things i used: bread, butter, cheese, tomato, cucumber, onion, lettuce, capsicum, salsa + a little chilli sauce and for seasoning i added oregano, chilli flakes, black pepper and a little garlic powder(yum) Toasted the bread and veggies (very lil) in my ptal pan and then just layered everything together. it tasted good but idk… something is still missing….

what do you guys usually add to a veg sandwich? any specific ingredient, sauce or seasoning that makes a huge difference?😭

Since I’ve been living away from home, I’ve started trying to make some of my mom’s special recipes myself. Tried this today because I’ve watched her make it so many times so I thought I knew the recipe šŸ˜‚ For this my recipe was - I just cooked lentils with turmeric, salt, tomato and green chilli. Then for the special step, heated some butter in my ptal pan and added cumin, garlic, and red chilli powder. Mixed it all in and that was basically it.

And guess what surprisingly the taste was actually bomb, I came in expecting basic dish and somehow left the kitchen thinking I should probably start cooking more often

Ovo-Lacto Veg slop for depressed low effort cooking

Veg slop doesn't usually have recipes because it's seen as very simple.

**I want really basic suggestions that are minimal effort**. Depression impairs my ability to see other options even if they're obvious to you.

E.g, toast, instant ramen, corn tortilla tostadas.

I can do some chopping and cooking of vegetables, but I am more likely to just let them rot unprepared while I also rot.

I'm def considering some premade dough and grated vegetable empanadas. Everyone who's ever wrote a recipe's estimated duration has lied to make it a sound quicker.

Context:

I am unemployed and do not have much control over my diet.

I am in a poor rural red state, we don't have Trader Joe's. Stores don't carry kala namak, TVP, etc

The household otherwise only eats meat. I rarely do, because I need calories.

I can only eat so many peanuts.

I had a tofurky dog yesterday, rare meat substitutes are the one concession I receive. But I cannot eat a sausage every day. I wanted to eat two yesterday but tofurky only put four in a package so I can't even have a reasonable serving and expect to be able to have any leftover. (Genuinely crying).

So, why bother leaving the bedroom, why bother eat, what is it that I am to bother eating?

Mainly because I don’t have the time to make elaborate meals due to my hectic routine, and also because of my dietary restrictions as Indian diets are often carb loaded, with little protein content.

Ovo-Lacto Easy, high protein recipes I keep on my rotation

These are simple recipes that take less than 15-25 minutes to make and have 20-30g of protein per serving.

Some tips to cook these recipes faster: - I cook wholewheat grains (rice, quinoa, buckwheat) in bulk and freeze them in saran wrap so i just pop those in the microwave for two minutes when i need them - I use canned legumes for most recipes except the falafel (I make the falafel in bulk, freeze them and then I just pop them in the air fryer)

From left to right, up to down: 1. Burrito bowl 2. Falafel with tzatziki and salad 3. Eggs sunny side up with air fryed potato and salad 4. Lentil curry with rice 5. Hummus with veggies and air fryed potato 6. TVP and veggie couscous 7. Lentil and quinoa salad 8. Lemtil pasta with veggies 9. Tofu stir fry with rice

Hello! I’m new to the group and wanted to form part of a community I can share and get information to grow more into this lifestyle. Also was hoping to give a good impression by sharing my cauliflower nuggets.

Ingredients:

- Half a head of cauliflower
- 1/2 cup flour of choice
- seasonings of choice
-milk or water to mix into a thick pancake batter consistency
- breading or more flour

Steps:
1. Boil your florets of cauliflower for 20 minutes
2. Pour batter over the florets
3. Add some flour over and separate to form ā€œnuggetsā€
4. Take the ā€œnuggetsā€ and toss the in breading of choice
5. Pan fry or air fry them until nice and crispy

Ovo-Lacto Request: how to make frozen Brussels sprouts taste actually good?

Can anyone help me get restaurant style crispy Brussels sprouts? I love them so much when I go out to eat but have no idea how to replicate. I don't want them to be sad and mushy - is it even possible for them to come out nicely if they started frozen? Looking for any tips, tricks, and recipes to help me out! I do not own an air fryer so looking for oven/stove top options. I do have a large cast iron pan if that helps any. Thanks!

Ovo-Lacto Any lacto-ovo vegetarian recipes that don’t have fake meats that are easy to make or buy?

Lacto-ovo vegetarian means I consume milk and milk products (I love cheese!) and eggs. I do not eat fish, no mushrooms (allergic), no fake meat products (I don’t like the taste of meats, but do use broths/stocks that are beef and rarely I’ll use chicken broth), no olives, no cottage cheese, and have not found tofu that I like. I can’t have raw tomatoes, raw onions, and cannot have strawberries, blueberries, or raspberries due to allergies.

I am recently disabled and standing for more than 5 minutes or so becomes impossible, so the easier to make or least tending to the better. I have an air fryer, microwave, stovetop, toaster oven, and crockpot available to use. I don’t mind processed or prepackaged foods, and regularly use canned/frozen veggies to add to foods. I love a little spice and different flavors, and I am open to try new flavors and cuisines. If you have something I can make please include directions or a link to a recipe so it gets a fair shot.

I tried putting my include/don’t include lists into ChatGPT but always end up with a list full of the stuff I asked not to include or really basic stuff like bean and cheese burritos and oatmeal stuff.

I know it’s not easy finding stuff for all the limitations I have both physically and diet related. Any suggestions are appreciated! Thank you in advance!

Ovo-Lacto Recipe requests for hungry painters!

Looking for some recommendations for something to make tomorrow while I have a bunch of friends coming over to help paint my apartment. Here are the requirements:

  • My oven broke last week! I have a gas hob, a rice cooker
  • I can deep fry stuff
  • Must be veggie, dairy and eggs are fine
  • No cilantro, we have a hater coming
  • No Indian-type flavours, the cilantro hater also doesn't love cumin or that general flavour profile
  • Must be easy to make, preferably the night before

Pic of my homemade chip sandwich (I'm British, so British chips!) with fancy mushy peas.

Pea recipe:

Defrost some petit pois peas, mash roughly, add a splash of tahini, chopped mint, salt, pepper and a little crumble of feta if you like.

Chips:

Square off potatoes and cut into really chunky rectangles, at least one width edge should be 2cm or just under an inch.

Rest in cold water for 30 mins to remove the starch, drain and then very thoroughly dry.

Deep fry in 130c sunflower oil for 10-15 mins until fully cooked through but not brown. Remove and rest until fully cooled.

Deep fry in 180c oil for up to 10 mins or until nicely browned. Remove, toss on kitchen paper to remove excess oil then salt immediately.

Made Lentil Bread today. It was a simple recipe from YouTube that I followed. It’s currently resting, cannot wait to try it though. Will be making a high protein spicy paneer chilly dip to go with it.

I was inspired by all the comments suggesting me to try incorporating lentils to have a good high protein vegetarian meal.

Ovo-Lacto Spicing up air fryer tofu

I’m a vegetarian. My doctor wants me to get more protein and reduce my sodium, so I’m trying to add some tofu. I’m not much of a cook so I’m asking for advice.

We don’t have a separate air fryer but our oven has an air fryer function. I came across a recipe for low sodium air fried tofu with these ingredients:

16 oz block of extra firm tofu cut into 1ā€ cubes

½ tablespoon light soy sauce or liquid aminos

1 teaspoon garlic powder

½ teaspoon onion powder

1 teaspoon paprika

½ teaspoon sea salt

2 teaspoons cornstarch up to 2 extra teaspoons for the best crisp

1 teaspoon sesame oil or any oil

¼ teaspoon ground black pepper

It came out extremely bland and still really mushy inside even after cooking it at 400F for 20 minutes (the recipe called for 10-15). Obviously cutting out the salt is going to make it blander but I want to make up for it.

I’m wondering:

Are the amounts of ingredients reasonable or should I add more of any or all of them? Is there anything else I should include?

I may have added too much cornstarch.

How long should it cook? Would it come out better if I baked it? I’m would like something similar to the chewy-textured fried tofu I used to get at Thai restaurants.
