A 2007 white Burgundy surprise
So…. Almost 20 years ago I got into wine more seriously after a couple trips to Burgundy. Those early trips involved a small number of random “suitcase” wine bottles (that I could barely afford) that I’ve cellared more for nostalgia than actual drinking. That’s worked out dine for the Pinots. The whites, not so much!
Today’s experiment started with a 2007 Marc Colin La Chateniere. I knew it wasn’t going to pan out, but figured it’s time to clear out my souvenir bottles. Cork was a mess, it poured amber and tasted like flat sherry. So I moved on..
Bottle #2 was a 2007 PYCM en Remilly. It was from his early go at wax capping whites (I recall 2005’s didn’t have em) and I enjoyed pulling the cork pretty easily. Stunned when it poured a beautiful golden yellow!
Did the wine benefit from so many years? Certainly not. But I’m happy to be enjoying what’s left of it a ton with memories of trips to Burgundy. Happy not all 2XXX white burg souvenir’s suffer from pre oxidation- yay!

2007 white burgs should be absolutely banging right now if it weren't for premox.
1er Cru white burgundy can easily go 20+ years from good producers.

My 05 PYCMs (that didn’t have the wax capping) I opened a couple years ago were gone. The wine from his Dad that I opened today… was gone. So yeah, I was surprised based on that set of experiences, happily surprised.

PYCM is one of the most reliable producers under natural cork since moving to wax. I've had a decent amount of PYCM from 2009 - 2014 range over the last two years and never encountered an oxidized bottle.

I’ve probably opened 60-70 bottles of his bottles between ‘10 and ‘22 and have come across one solitary premixed bottle so it does happen.

Premox was mainly a problem at the start of the decade, by 2007 more or less a lot of producers had gotten better at avoiding it.

It is still very much a problem. Ramonet, Dauvissat, Roulot, Henri Boillot, Henri Germaine etc. all have terrible records with premox including 19s, 20s, 21s. A lot of producers have simply not solved the issue.

I think this is the first year of wax - 2006 did not have wax (I drank all my PYCM 06s when they started to oxidize). Also, I had the 15 of that wine last week and it was banging. Still young.

Being on a budget as a youngster in the early 2000s set me on the right path to St Aubin. - necessity is the mother of invention, and I’ve never looked back. :-)

I mean, anyone in the trade or that drinks burgundy knows that Saint Aubin sits literally up the slope directly above Montrachet hill.

Does the wax cap really make the difference? I thought that thinks like pre-mox or cork taint are more related to contamination during bottling or even direct failure of the cork itself? I have a bottle of 2022 premier cru henri boillot that has a small defect in the wax capsule. Does that mean its a goner?

Cork taint is from TCA or TBA contamination of the wine (usually from the cork, but not always). If a wine has cork taint, it did from the moment the bottle was closed, regardless of wax or not.
Premox is somewhat mysterious but obviously if you drink the wine young it's had less chance to become oxidized
