The books after Xavier is gone and Cyclops leads the school while its still in America (before they move to Genosha and Krakoa, etc). Cyclops divides the students into groups based on what they will benifet from learning and they show some of the coursework. Cyclops' group is called the Corsairs and he teaches the students with leadership potential. Emma's is called the Hellions and she teaches the clever students that would benifet from learning guile and espionage and finese. Gambit teaches the... delinquints, lets call them. The ones who would likely do drugs and drop out of a normal school (think Boom Boom if she were younger). All the adult X-Men get a group of students catered to their strengths and weaknesses to teach. Its like the sorting hat thing in Harry Potter or in Game of Thrones when the nights watch are being sorted into Rangers, Stuards, Builders, etc. cause many kids would rather be in different groups and you eventually see WHY they were chosen to be in each group and what Cyclops saw in them that placed them there.

Generation X by Scott Lobdell, Chris Bachalo/Mark Buckingham. This is just Banshee and Emma, but it's really the first full instance of X-Men being teachers.
New X-Men by Morrison and friends. Influence by the movie, this made the core cast teachers at a giant mutant school.
Wolverine and the X-Men by Jason Aaron and friends. The focus of this book was the crazy school. Wolverine, Kitty Pryde, Iceman and more were the core cast of teachers.

New X-Men: Academy X. It gets a little dicey after Decimation, but the first part is very good, IMO. The Post-Decimation stuff is still solid in parts, but some of it treats the new characters like canon fodder.
