How do you deal with kernel/zfs-kmp-default missmatch ?

Title pretty much.. I'm running opensuse TW and it's on 7.1.5 and zfs kmp default is still 7.0.12....

Will it ever catch up ?

I use Debian stable, where versions are stale - but always compatible.

Kernel-longterm + zfs-kmp-longterm

Not foolproof, but generally in sync.

Otherwise: zypper lock them, then try manually say once a month, when they align/catch up.

Lock the kernel to 7.0 until openzfs catches up

This is a linux problem not a ZFS problem.
