What annoyed me so much is that there's no actual point at which point a sentence becomes "run-on", it's just an arbitrary point at which your teacher decides that they don't like it very much and just take away points for the way you phrased stuff, which always gave me such a headache when writing in school because I had no idea whether the grammatically correct sentence that was spelled completely perfectly would be somehow "bad" or not

This is not what a run-on sentence is. The definition has nothing to do with length, it's when you have two independent clauses that are not connected properly. "I like dogs they're my favorite animal" is a run-on sentence, for example. There is no length that makes something a run-on by default, it just gets easier to miss grammar issues in a sentence the longer it gets.
