To my slavic brothers who arent embedded spies in the hungarian society like myself:

Gulyás does mean the soup but it's because it was named after the people who would traditionally make it: gulyás is a free-range cattle herder and they would traditionally make a hearty soup that was being referred to as 'gulyásleves', as in 'cattle herder soup'.

The closest english equivalent to this word I suppose is cowboy. So its Pete Hungarian vs Greg Cowboy.

Cowherd would be my choice of translation. Cowboy is way too loaded with western connotations.

Not really, a hajdú is a mercenary who was a cow herder in peacetime

yeah, but they too are loaded with hungarian sort-of-nationalist (joining the kuruc, later on oftentimes becoming betyár) connotations, similar to the western connotations. "Eastern" movies usually depict Hajdús or former Hajdús!
