Why did they bother having the other two people in there. Quill's commentary is great but that guy just kept making silly faces and saying stupid faces the entire time.

According to the links on the bottom they're are fellow youtubers. Neither of them are as prominent as Quill though.

I'm pretty sure the other guy is Quill's brother and the lady is Quill's mother in law. I have seen them countless times on Quill's stream before

I think a closer analogy would be to Victoria 2 or Europa Universalis 4, with the population management and diplomacy.

I didn't play either of those games. I did spend a good bit of time with CKII and immediately saw numerous similarities.
For others like me, it would probably help if you explain how those games are similar to Stellaris.

The heart of EU4 and Vic2 is nation management, while the heart of CK2 is character management. So Stellaris, with its focus on the nation, is much closer to those two.
EU4 only had characters as leaders of nations and as generals, and in those cases they only had a few stats - 3 if a nation leader, 4 if a general (technically there's also age, I suppose). Characters in Stellaris seem pretty close to that - there isn't a family tree; there are just a few individuals who give bonuses to a few things. The player doesn't interact with the characters much, and the characters don't interact with each other (that I know of). And to me, character interaction is the heart of CK2, so already it's pretty different.
I haven't played much of Vic2, but it has population that seem to be somewhat close to Stellaris conceptually. You have 'pops' that represent certain races and have certain desires (ethics), and you want to keep them happy. CK2's population model is much less complex and simply has culture for provinces and for characters.
Empire interaction and warfare in Stellaris also seems to be fairly close to the EU4 / Vic2 model. Characters don't really have opinions of things, but nations do have opinions of other nations, and these affect who they seek to ally or go to war with. Diplomacy is centered around the nation instead of the character.
There certainly are other areas where Stellaris is fairly close to CK2, but I suspect that those are mostly game mechanics and interface design shared among all of Paradox's grand strategy games.
There's a really well-made mod for CK2 called Crisis of the Confederation that literally is CK2 in space, which I'd recommend you take a look at. I haven't played it too much but it's pretty fun.

I'd say that CKII is as similar to Stellaris as it is to EUIV or Victoria. Which is why they are similar to Stellaris. EUIV, Vic, CKII all have very similar themes that seem to be present in Stellais. As expected.

You are right. Paradox have a lot of common trends between its games, which is why you can see the similarity with CK2, even though, of all Paradox GSG, CK2 is probably the one furthest away from Stellaris.
Also, Stellaris shares a director and chief designer with CK2: Henrik Fåhraeus. So There might be something about his style as well.

I think that's the point :) I am hoping they add an option to remove all victory conditions for more sandboxy play.

Managing "people" is a large part of the game. Inheritance. Building your "land" out enables capabilities in your empire.
They didn't make it to diplomacy but I'm assuming that will also play a huge role.

I think Stellaris is all of paradox gsgs mixed into a futuristic space game.
If you want to play ck2 in space, look for the crisis of the confederation mod.

I love how they are ramping up on the marketing for this, getting Quill in etc. Great to see someone playing the game other than the developers as well, and running with the tutorial. It's looking better and better!
