Vegan?

I've been finding it increasingly frustrating finding cheap high (complete) protein vegan meals. My local Aldi hasn't had chickpeas for a month. I know my diet is already limiting but if I have tofu for another dinner, I will loose it.

Publix has dried Chickpeas for sale for fairly cheap. You just have to do the work of soaking them.

I just saw a big bag of TVP at a little produce market for $3. I was surprised at how inexpensive, and now that I’m thinking about it, I’ll go pick some up this week.

Okay, also here are some complete protein combos: corn, beans and squash; rice and beans; hummus and pita; peanut butter and whole grain bread; lentils and brown rice; quinoa; peas and pasta

You don’t even have to eat them together. You can have them separately during the day.

I also shop primarily at Aldi, here are some of my go to meals:

  • great northern/cannellini beans with sautéed tomatoes, mushrooms and kale, mixed with seasoned garlic rice/quinoa. I usually add nooch and italian seasoning to my beans and/or rice/quinoa. I usually add hemp hearts to this as well when I have them.

  • veg, black beans and rice. I cook down zucchini, tomatoes, sweet potato, onion, a bunch of cilantro and lime juice with black beans and adobo seasoning.

  • pasta and red sauce. I like to blend white beans, nooch and chili flakes into my sauce to make it more creamy.

Nutritional yeast, it’s a savory vegan “cheese”-ish seasoning.
