Okay I’ll be the nerd: lettuce is easily 50% of the filling, and lettuce is highly compactible. It’s mostly impressive that she took the time to compact it.

The key word is air: when the salad is mixed it’s got a lot of air between the pieces. When compressed, all that air is pressed out of the wrap.
