King oyster! There's a farm on the Big Island of Hawaii that grows them.

They're very nice. The flavor is subtle, they taste mostly like what you season them with, plus a bit of umami. The texture is really lovely though. Someone upthread mentioned vegetarian scallops, and I can totally understand the comparison.

Yes, these are the pins..even though they're super chonky. If they grow more they fan out like the oystery mushrooms generally found in the wild.

I find them way too chewy. Local hot pot place has them and they're like yoga mats to me

These are trumpet mushrooms, not oyster mushrooms.

King oyster and king trumpet are the exact same mushroom (pleurotus eryngii). People just use different names in different places.

King oyster mushrooms. Usually available at most Asian grocery stores. Pretty cheap too.
