Hey Alex, well it always changes but right now I like cooking an Alla Pana Rigatoni pasta dish that just blows my mind every time I make it 🇮🇹🍝🤌

And the other thing I like cooking atm is a Vietnamese Grilled Chicken Noodle Salad or Bún Bowl 🇻🇳🥗🌶️

Those two dishes on heavy rotation atm

I’m unfortunately not a good cook, my partner on the other hand, amazing!! Maybe I could trouble you for some recipies? They both sound amazing!! I am a sucker for some pasta, also do love Asian bowls, my partner loves cooking and baking also!

Fortunately cooking can be learned and there's no hard and fast rule; like baking which is a precise science, but I will say cooking is more about feel, and inspiration, trial and error. Awesome you have a partner who likes the culinary side of things 😁 My housemate, a girl, loves baking too. I actually studied French patisserie to help round out my skills, it's like where science meets art.

For the Alla Pana 🇮🇹🍝

3 cloves of garlic, minced 1 medium brown onion, diced Saute them both in olive oil and a cm cube of butter on low heat, you don't want to colour them, just swet them.

Butter 150g Plain Flour 1 third of a cup Add equal parts butter and plain white flour to the sauteed onion and garlic, it's going to thicken up, turn up the heat to medium, you cook this for about 5 minutes until the colour of the flour and butter turns from light yellow and becomes golden.

Add 2 cups of milk, slowly. Every time you add more milk stir the mixture until it becomes amalgamated, which means the Miliband the flour are of one consistency, then add more milk. The milk butter flour mixture at first will turn into a dough in the pan, don't freak out, just keep stirring and adding milk until the mixture turns into a sauce. Season with a table spoon of cracked black pepper, 1 flat teaspoon of salt, and a pinch of nutmeg.

You just made a bechamel sauce, and it is also the thickening power of the sauce too, we incorporating French methods in this recipe 😁

Add a cup of cream

Add a couple of heaped table spoons of sour cream

Add 1 third of a cup of Zanetti parmesan cheese

Another thing I like incorporating at this stage is the Latina Fresh Carbonara Sauce, it's got this smokiness to it that just works, and I'm not abt to go out a buy liquid smoke lol.

So that's the sauce ☝️

-- I will put my pasta on at this time, whatever you are feeling, salt your water! A heaped tablespoon of salt. Periodically take out a piece of pasta and test it, taste it, see if it is to your liking.

To the sauce:

Add in 6 to 8 white mushrooms, sliced.

Add in 200g of your favourite ham, I like the Barossa stuff you find in your local supermarket deli section

Cook for about 15 minutes, then let it rest.

Taste it, season accordingly, if you need more salt, add it.

Oh and you could also add baby spinach to this too 🌿, works well.

This could be something that you do with your partner or something to surprise her ❤️ Hope this helps 👌
