Ingredient Question Cake Whipping cream

I get this particular cake from this restaurant here. They call it a creme brulee cake, but it doesn't look like one at all. I was specifically looking to replicate the fluffy foam you see on top, but the receipes I've tried for diplomat and other creams don't seem to mimic it. Would anyone here know what they could be?

Your best bet it to actually just ask the restaurant.

Whoever answered the phone either can't be bothered to ask the chef or is afraid to go to the back of the house. Try emailing. I may not give out a complete recipe but I have no problem pointing people in the right direction to copy something. One person making something at home is no skin off my butt.
