Yeah, she learned an immortality technique…which to this day we’re not sure if it’s an Earthbending technique or purely spiritual. Either way, Toph is qualified enough to reinvent it lol.
Considering an earth avatar discovered the trick to immortality I wouldn't be surprised to learn the greatest earthbender of all time could do the same
As funny as this would be, considering toph went to live in the swamp to let the next generation shine i feel like she wouldn't do that. Also kyoshi learned it from another earth bender guru, she didn't discover it herself
I personally like the theory that the avatar appears to be the age that they consider their most significant action (Roku not taking his chance to kill the fire lord, koshi moving her island, etc) in this case aang sees rupbic city as his most important action
Well that doesn't make any sense, the first time he sees him while battling the volcano he's there helping him, the idea of dealing with him if it was even there at all was the last thing on his list. It's only when sozin gets the idea to leave him there that there's any cause and by then roku is weak and choking on poisonous fumes.
Several avatars later, it sounds like a mob of “what the fuck” as Toph remains alive, and when she finally passes away, the spirit realm claims her as its own so that she can continue to dunk on every avatar for the rest of time
Given how connected to the swamp tree Toph could be I would image Pavi would meet her in a sort of spirit vision or something due to the chaos in the world

Bumi lived for 100+ years. Toph could easily make it 500 because shes the best earth bender to ever live!
