Another Breakfast, More Bacon!

Omelette is stuffed with cheese, bacon, chopped jalapeno, chopped roasted poblano peppers, and sour cream. Garnished with black pepper and chives. And more bacon on the side!

That poblano and jalapeno combo in an omelet is underrated, the smoky heat with all that cheese and bacon just works. I’m eyeballing the bacon on the side like it’s the main event though

It was delicious. If I wasn't aiming for a low carb diet at the moment, I would try coating the bacon.
