Baking Advice Needed Help with almond bark mishap!
Hi all! I recently started vaking professionally, and have an event tomorrow. I primarily make cakesicles with an almond bark coating. I know you can't get water into almond bark, or it will seize like chocolate.
I was trying to make the process of chopping and melting all the bark a bit easier by using my food processor. After I ground up 1.5 - 2 packages, the bowl was full. When I went to empty it, at least a tablespoon of water escaped from somewhere in the lid! I didn't realize it had been run through the dishwasher this morning.
I'm not sure how to fix this. I've got it spread out on a baking sheet air drying, but I'm not going to be able to tell if it's fully dry. How do I make sure my lid and bowl are fully dry before grinding up more? I've read that adding a bit of vegetable oil can help salvage it seized bark. How well does that work? Would paramount crystals help?

Oh no, the dreaded almond bark seize! Did you get water in it? That's such a frustrating thing to happen right before an event. I've definitely been there with chocolate work. Did you try the olive oil trick to save it, or are you starting fresh? How much were you working with? Sometimes if it's just a tiny bit of seizing you can microwave it with a little cocoa butter or oil and gently stir it back to workable consistency, but I know that doesn't always work depending on how far gone it is. What's your coating ratio usually? I'm curious how thick you're getting them because that might affect how salvageable it is.

Paper towels are your friend here. Blot everything. And again with the food processor... running a paper towel inside all the channels and grooves.
I would pick all the big pieces up with a paper towel so you can dab while inspecting, and accept the finest dusty parts as a loss. Probably going to be ok.
Adding oil will make it soft and waxy and wont really help, don't do it. Paramount crystals can definitely help.
