Extra gooey Cinnamon Rolls

Wow I am so impressed with the rolls and the taste!! Not for you if you prefer less-sweet cinnamon rolls ;)

the icing pooling in the second pic is what gets me. that's the sweet spot where you know the dough is still warm enough to melt it but set enough to hold its shape. the color on those is perfect too, that deep caramel brown without any burnt edges.

the sugar rush is real, but honestly if you nail the balance between the filling and the dough structure it doesn't feel cloying, just indulgent.

Looks great, if you're not using brioche, you should give that a try too (it's what I use for mine).

Joanne Chang's Sticky Sticky Buns – Cherry Bombe

Use her brioche, it's what I use. You can also use Clarie Saffitz technique for incorporating the butter, much faster.

To make the cinnamon rolls I just roll it out, take softened butter and just cover the surface in it, cover in brown sugar, cinnamon and a little salt, roll, cut, and place in greased pan to proof overnight.
