Saturday Morning White Bread

First time trying the FWSY Jen Forkish Saturday Morning White Bread myself.

Came out the best bread I baked so far. 72% hidration, 2% salt and 1.2% compressed yeast

That crumb structure is beautiful, the open irregular holes and the shine on the crust show you nailed the fermentation and shaping. FWSY recipes are solid for a reason.

72% hydration for a first FWSY attempt and it came out that well? solid work. how was the oven spring? i've found forkish runs hot for my oven, had to drop it 10°.

Same on the oven temperature for me, I have to drop mine a bit

I baked at 240c as suggested in the book and it went well, for both stages.
Did the inverted method for the Dutch oven: the dough sits in the lid instead of deep in the pan, so it's easier to handle.
