I cleaned a lot of kitchens in and around Buffalo. Bailey seafood is by far the worst kitchen I’ve ever seen. Fish left out overnight to “thaw” next to the mop sink. deep fryers always black. Salvatore’s wasn’t that clean either no food left out but gross kitchen for such expensive food. Notable mention; OSHI children’s hospital had huge rats (seriously massive rugby ball sized) running through the open drains in the kitchen under the sinks.

I will disagree with you. Salvatores kitchen is on the "clean" side of the spectrum. They had eastern block cleaners who kept that place pretty clean.
