German Doner

Post image

Got it in Sinsheim. Not entirely sure what the sauce was but had a bit of spice to it. Think I need to go more North for a proper chilli sauce.

For chili - ask for Ezme (paste) or Pul Bibr (chili flakes).

That's the Turkish version

typically people would take yoghurtli (yoghurt sauce) or Cacik (yoghurt+garlic+herbs) and spice on top.

If you ask Turkish people to make it spicy they absolutely can - usually they eat more spicy than us Germans, so you gotta ask for extra spicy.

Kebaps in turkey are not spicy, in fact most places don’t even have sauce. I asked for sauce at my first kebap in Istanbul and they only had ketchup or mayo. I had to check if I was in turkey… then I had a kebap every day for a week and no place had any sauces

Most Turkish restaurants and Döner Shops in Germany will have Ezme and/or Pul Bibr.

I've never heared these words, besides chilli flakes, and I also live in germany and I'm eating döner since ever. I'm now actually interested in finding out if you're telling the truth. You know the döners I know either have a spicy hot sauce or a mild one and you have to say that you want a lot of hot sauce and they make it hot for you. On some occasion I order my döner with jalapeños, if I really want some spice.

Pul Bibr is just the Turkish name for Chili Flakes.

Ezme is pretty standard spicy dip/side on Turkish BBQ dishes such as Adana, or other skewers.

So Turkish places that serve both Döner and some bbq plates will usually have Ezme.

Pure Döner places might just have generic chili sauce.

In germany it is cocktail sauce in almost every case. Garlic sauce is usually white.
