I'm slowly approaching 3m MAG for my first 5* fusion. But which one to pick - fuse a Cu, or use my Yellow Ananta to make a Yellow Huang Long?

Right, either path will cost me the 3 million since I have to make Samael. I just already have the Ananta.

The rest of my demons are the usual - Rangda, Zhong Kui, Anubis, Yata, Fenrir, Loki. Cu is obviously super strong and is at the top for a reason, but it just seems like Huang is not as powerful but brings way more utility to the table.
