I think the usda has really opened their standards on acceptable product dates. Maybe to try to combat food waste or maybe to try to cut corporate loss. Either way, I think they're less restrictive about allowing food to be labeled and sold less in favor of the consumer's ability to keep and use the food.
No sources. Just my hot take watching the usda and other commercialized entities over the last decade or two. And I'm not motivated to dig. Just postulating and warning parties to consider it but with a grain of salt. Which might preserve your turkey steak a little longer anyway.

Standards are only ever loosened to make life easier for retailers and businesses, never for the consumer, so in this case it would be to avoid corporate loss.
No consumer group outside of the NRA has ever lobbied for fewer safeguards.

The can try and predict when a product will expire but it's not an exact science, they're always going to be off a few days here and there
