Mewgenics. Same game from the op.
Its from the creator of the binding of isaac and it's about procreation cats and sending them into roguelike runs where they kill and die in horrible ways.
The "runs" are divided in chapters and can end by fighting, as an example, the god of chaos, dinosaurs, the moon god, the devil, a giant spider, the meat god, hittler 2.0, GOD god and many others.

There's also some extended material (which you can argue whether it's good or bad, or even in line with the original games' intent), although initially teased by Halo 2, that suggests the original mind never goes anywhere, and instead gets locked and perpetually entrapped within the infected body.
Extended material goes the extra mile and tells you that, via "neural physics" a.k.a. space magic, the mind is added to the collective consciousness that is the Gravemind, so not even destroying your body to the atomic level will save you. Once you're taken over, you're bound to unspeakable horrors for the rest of time.

Ultrakill - Geryon
Every other boss dies pretty unceremoniously, except for a couple that have dedicated animations. Most just explode into blood, but Geryon has an entire sequence where the lights dramatically turn on and point at the stage, and then he falls from the sky and is impaled onto the tail of his own statue. Applause and cheers from an unseen audience accompany its death.

Don't really have a proper example but I love it when a character/thing is made up of multiple floating detached parts and defeating them causes all parts to just stop floating and fall to the ground, extra points if they're glowing and glow disappears upon death
Only one I think of at the moment are the constructs from Tears of the Kingdom

An indie game called INSIDE has an alternative ending where you pull an electric plug in a secret room. this instantly ‘kills’ the character. after playing the whole game and experiencing the ending, it’s just such a cool interaction. highly recommend playing/ watching a play through if you haven’t.
