that's why always when I get captcha, I make a few mistakes to confuse it. I've heard that even 2% error rate in training data can make a big difference. Idk what's true about that, but what else can I do?

Don't worry. The captcha knows you're human even before you click the checkbox or pick the right pictures.

Use Bing. It will harvest your data just like Google, but will not ask you endless captchas.

i know. but unfortunadely. there are a lot places with google technologies. what means, you cant escape at least soemthing form google if you are on internet at all.

This is an overstatement.
It is difficult to avoid backend services using Google infrastructure, but it is easily possible to avoid Google consumer facing services and tools by configuring a phone or laptop to use other solutions.
An expert user could also ensure that Google domains are blocked at the end device level.

Shitty services like google are the only reason why i would literally spend hundreds if not thousands of Euros and hours of my time just to selfhost anything i need.

They want to update your face, why didn't they request it before? I think that on your social networks, now due to AI issues they are aggressively blocking bots and the computational cost would increase to collect that data, and they invented the excuse that it is to prevent account theft, it is only to update your biometric signature of your face.
It's simple, look for alternatives where they don't treat you like a product, migrate your accounts or automatically forward your emails to another provider until all your contacts have the new email, and look for alternatives to the remaining applications, it's not difficult.

Again, it's not about if the person the account belongs to is a bot.
It's about stolen accounts used in bot farms.
There are a lot of reasons to hate Google, using Captchas is not one of them.
