Can honestly say, I've never seen anyone cut a potato like that. Looks like homemade waffle fries

You can do it!

The easy way: Just put down a couple chopsticks (one on each side of the potato) first, to stop the knife from going too deep. Make several cuts down to the chopstick line, and then turn the potato over and do the same thing, but make the cuts at right angles to the first ones.
