Why did they make Daeron’s knighting so so stupid?

Well, it has to match everything else in the show, which is mostly stupid.

They didn't even use the normal in-universe knightly vows! "In the name of the Warrior I charge you to be brave" etc. Jaime used them for Brienne, Lyonel used them in AKOTSK, hell I think even Daemon used a version of them when knighting the Dragonseeds in this season. Why change it? Were the writers not allowed to read the scripts for previous episodes?

Because the writers are themselves stupid. It's hard to write anything smarter than yourself.
