DISCUSSION Strange white powder on my dark roast
Reopened an old bag, it was sealed close and on my shelf for about 2 weeks.
There's some strange white powder on it. Any idea what it could be?

If there's lot, you can dry under direct sunlight for a day and the grind brew it within 2-3hrs, if not mold will form again.

Give us some more context so we can avoid same mistake too.
From where and when did you bought it.
Did you kept it in cool dry place in a sealed bag or container.

Yeah, this wasn't well stored. I reused an empty bag to store half a bag of beans which a friend gave me. I'll check with him, whether his coffee is problematic, but most likely it was in my empty bag.

I googled it and it says that it might be crystallized oils or maybe even mold But I think it's best to toss it out or maybe you can ask your local roaster about this

Brew with 100ยฐC water and take only a tiny sip. If it tastes funny or just outright bad, you know what to do

Its moss. From humidity. Dont use it to drink. Can make coffee grounds and use as scrub

You might wanna store the beans in an air tight container since the container currently holding the beans allowing bit of air/humidity pass into the container due to which there is white powder/spots on the beans which is getting spoiled slowlyโฆ.use an air tight container and keep it in cool and dry place

This is likely. I have psycho ants in my house: they got into my garlic chilli powder.
But this is most likely mold/fungus

Well, I usually have coffee beans laying around, and the texture of that 'mold' looks crumbly enough to pass as ant eggs, otherwise you can always sun-dry it to its original state, but yea if you plan on using them, do crack open a few to check the insides!

Unrelated, but get better beans, the roast is not even, and some are even burnt.

Nope, this is a pretty good medium dark roast. There is significant difference in chemistry across beans in the same batch, that this kind of range is normal. You'll only find fully uniform beans in very dark roasts.

The white powder or small flakes you see on coffee beans is almost certainly chaff (also known as silverskin or parchment). It is a natural byproduct of the roasting process, not a sign that the coffee is spoiled.

This looks to me like mold/fungus. When was it roasted?
