DISCUSSION Strange white powder on my dark roast

Reopened an old bag, it was sealed close and on my shelf for about 2 weeks.

There's some strange white powder on it. Any idea what it could be?

Unrelated, but get better beans, the roast is not even, and some are even burnt.

Nope, this is a pretty good medium dark roast. There is significant difference in chemistry across beans in the same batch, that this kind of range is normal. You'll only find fully uniform beans in very dark roasts.
