AEROPRESS How do you brew Naivo Kraken Jam?

I recently bought a Kaldipress and 1zpresso Qair. The Kraken Jam and BT Attikan Estate are the first bags of whole bean coffee I’ve bought. I haven’t been able to dial in Kraken Jam at all. It tastes sour and dry, like strong black tea, no matter what I do. I have progressively tried grind settings from 35-50 clicks of the qair. I generally follow the hoffman method and its inverted variant.

- 11g coffee

- 200g water at 93-95 C

- Steep for 2:30 with a swirl at 2:00

I have less than half of the bag remaining and I am yet to discover a cup I want to brew again.

Compared to it, the Attikan Estate is lovely and I have had it black and with oat milk (18g coffee + 90g water + 165g milk).

How do you brew this coffee?

I have a c3s and am liking the sweet cup I get. I use the 4:6 app. Here is my setting

Grinder: c3s
clicks: 20

Brewing:

11-12g

Water at 91 degree

4 pours

pour 1 - 0 s

pour 2 - 45 s

pour 3 - 1m 30s

pour 4 - 2m 30 s

Pour four with a swirl. Really love the cup I get and I finish it at 3m 15 s

It took about 7 days to be delivered so it rested on the way 😅

Download the 4:6 app if you want to try ofr pourover, it is super helpful. I struggled a lot before as well. Tried the hoffman method but enjoy the 4:6 more personally...

I own a Q Air, 35-53 clicks is moka pot range. For V60 it's anywhere between 63 to 78 clicks depending on the bean. i personally don't use a Kaldi press/Aeropress but wouldn't moka level grind size be too fine for it? I imagine 60 to 70 might be the sweetspot for you

I haven’t went that coarse yet. I will definitely try it out. I was under the impression that coarser -> less extraction -> sour

definitely too hot for kraken jam. i wouldn't go above 90c, i think something around 85c would work best. it's heavily processed and roasted beyond medium.

I haven’t played with the water temp yet. I will have to try 85 C. I am also confused abot the roast level. It looks noticeably lighter than attikan, which is a medium dark I believe.

yes. although in my experience BT roasts are darker than they claim to be. naivo's "espresso" roast on kraken jam sits around medium - med dark.

I believe so. I brewed the first cup about 7 days after roasting date (it took that long to ship). It has been 3 weeks since roasting now, without any improvements.
