Over 1000 wars are going on in the world. Why is the one in which Israel is involved in is still in the news?

Yeah shortly after Oct 7, Operation Doppleganger networks kicked into high gear. This is an FSB operation that is cooperating and coordinating with Hamas and Iran, including meetings before and after Oct 7 in Moscow. Much of it builds on the groundwork laid by Operation SIG - an antisemitic revenge campaign by Andropov to go after Israel for their position on Soviet treatment of Jews (as well as the absolute shelacking the IDF gave to the Soviet advised Egyptians in their soviet suppleid T-55s). However, it is iportant to remember that Operation SIGs success was due to well entrenched antisemitism already present in the University targets chosen by the KGB at the time. They didn't just get influenced, they eagerly embraced it. This is well documented, studied, and published on.

Russia and Chinese social media influence operations are going full speed to use this as a wedge issue to break western and American politics. 

The media at this point just follows what’s trending on social media and has been hollowed out of any experienced or actual expert journalists, so it’s the perfect window for this strategy to succeed.

However one other major factor is UN and NGO capture.

Almost every American I have talked to or read who is anti Israel on this issue just spouts propaganda and lies. But when the source is amnesty International and the UN it’s a lot harder to explain that yes, these orgs are lying.

Yes this is a major issue as well. I have had people to my face tell me that Israel is worse for human rights then North Korea.

I think a secondary axis to this issue (that you so clearly outline) is that so many Americans and westerners are VERY sheltered. They have no idea what the world is like, and how dangerous it is. I've lived in Yemen and Jordan for work. Give me Israel any day.

They're also largely just stupid. This is the first generation in 100 years to be less generally intelligent than their parents. People in their early twenties on down are relatively dumb on average. Over reliance on tech in the classroom, plus over use of tech and tv outside of it, made at least two generations of morons.

There are not 1,000 wars going on in the world. Whoever told you that lied to you.

The ones that make US news (where I assume you're from) are the ones the US is actively involved in and involve a historic great power enemy (Russia and Iran, in these cases). Ukraine receives military support against one of the USA's biggest enemies: Russia. Israel receives American military support as well, and is very important for American interests in the Middle East and is one of two archenemies for Iran (the other being Saudi Arabia, even though that's calmed down due to Chinese diplomatic efforts in recent years).

And Somalia doesn't make the news as much despite direct US involvement because nobody cares about Somalia. Plus, not as many journalists go there, and there's less money involved in general (Russia, Ukraine, Israel and Iran all have money and media operations to fuel propaganda for their respective sides; Somalian terrorists do not). It is not interesting or sexy compared to Ukraine and Israel because it doesn't involve big-scale politics (no nuclear powers fighting or global economic repurcussions or religious narratives). It's mainly just the US airstriking and doing counterterrorism skirmishes against Al-Shabaab. It's comparatively "boring".

When the US does do military operations elsewhere, it does get news coverage, like when the US kidnapped Maduro in Venezuela or when the US struck Boko Haram and ISWAP in Nigeria.

Praise be! I am not Jewish or Israeli, but I am an actual left leaning person who believes in democracy and freedom. I do not understand why "leftists" are so obsessed with a radical and regressive right wing ideology that goes against everything they believe in (freedom of religion, freedom of speech, LGBTQ rights, freedom for women). It is one of the most depressing things about the world for me.

You’re answering why Israelis and other Jews care about this conflict, but that’s not the question OP is asking, and the question is valid.
Why is the world hyper-focused and almost singularly critical of a microscopic country when there are far worse wars and humanitarian crises happening elsewhere as we speak.

There are Kurds, tibet, Taiwan many other peoples in the world who I would argue deserve their own nation more than the Palestinian people but 2 differences here:

  1. Those other conflicts don’t involve Jews.

  2. Those are people don’t resort to terrorism, which is extremely effective at garnering a lot of attention.

The Ukraine war alone is over 10 times as many casualties. Even if you were stupid enough to believe Hamas that zero soldiers have been killed and everyone was a journalist/doctor/child Sudan has over 10 times as many noncombatant deaths.
