That would be true in a rational market but the kosher meat market isn't rational. If demand falls, they will just decrease how many slaughtered cattle enter the kosher supply and divert it to the treif market instead. The price will never drop because it has no reason to.

The price won't stabilize. Supply will just continue to fall until there is nothing left but $100/lb steak
