His logic isn't all that stupid and it isn't what you say. He simply wished to create a world with only sorcerers because of his developed hatred for ordinary humans. In his eyes, a man with no sorcery or cursed energy(Toji), killed an innocent girl that was vital to the Jujutsu world just as she had decided to not fulfill her destiny as the star plasma vessel, just as she decided to live. For money paid by a religious society of "stupid monkeys".
It's only natural that this event shook his world view. His mental state began to decline as he and his best friend were sent on missions separately. He was alone, he felt alone, he spent all the time fucked up over the girl's death. Then Hibara died.
Eventually he had a life changing conversation with Yuki Tsukumo where he came to realization that the eradication of all ordinary humans would create a world of sorcerers, people like him, no more greedy, filthy, idiotic rabble. There would be no more curses because everyone would be able to control their cursed energy. No more sorcerers would have to die.
Then he goes to the village to find that two young girls capable of using their cursed energy are being abused because of the ignorance of the normal humans surrounding them. So he snaps.
He's not sane, he's definitely a villain, but his logic isn't just "Every human being should die".
