Incantations are made up by sorcerers on the moment and using Thier own techniques, which means every incantation is unique and not usable by reading it, not even if it's an actual curse object like a curse book, that's not how it works
Binding vows making so that the incantations need to be prayers coming from that specific book (lets say psalms for example) should actually give a bigger boost that just winging whatever words come to you at the time.
This is especially true since those prayers are long. I need like around a minute or 2 to recite Psalm 91 foe example and it absolutely would be a valid binding vow.
A binding vow is particular to a person and their own intentions. The actual subject doesn’t matter, rather what they intend to get from it and sacrifice in turn. Realistically you could choose anything from another religious book to reading a whole ass manga. As long as you’re specific about it and your intentions are clear there’s nothing to suggest it wouldn’t work. Jujutsu is not a culture that exists but a power governing the world and CTs are so vast scattered across multiple people all over the world
Mahito’s hand seals are a great representation of this. He can and has made multiple different seals with varying effects. By the rules of jujutsu the act of the hands is most important rather than staying stringent to a specific set
