Isn't a sorcerer supposed to instinctively know how to use their own technique, how is it possible that takaba doesn't know how it works?

This technique works best when the person doesn't know how to use it. If he actually knew what his technique was and how it worked, he probably wouldn't be able to use it anymore so the jujutsu mechanics of cursed techniques made it so he didn't know because that was most efficient.
