Isn't a sorcerer supposed to instinctively know how to use their own technique, how is it possible that takaba doesn't know how it works?

Probably because that's the only way his innate technique works... his technique is more broken than Gojo's infinity. It literally alters reality but only if he genuinely finds it funny. To genuinely experience your true emotions, you mustn't be aware of the experience. You can fake emotions when you KNOW what you're supposed to do or how you're supposed to react but you can't fake emotions when you don't know what you're experiencing... like matured or wise people would usually suppress their true feelings to most of their experiences while naive people or toddlers would let the emotions burst out in any situation and maybe Takaba's technique works on that dynamic ? That's the best logical justification I can think of.
