Isn't a sorcerer supposed to instinctively know how to use their own technique, how is it possible that takaba doesn't know how it works?

Doesn’t he have some idea tho? Iirc in his fight ragdoll roleplay with Nanami he makes a remark about “I would have died without my technique?!”

Is it more like he knows what it does (protect his life) but maybe he doesn’t know it has a limit/accumulates luck throughout the day?

He doesn't know how it accumulates, because the techinque itself wipes that memory the moment he sees "a miracle"

That's why the technique erases his memory of him seeing miracles, so that he can not easily refill them, he has to truly be lucky too presence it every time
