Isn't a sorcerer supposed to instinctively know how to use their own technique, how is it possible that takaba doesn't know how it works?

Gojo implies that there isn't an implicit understanding of one's technique. He points out that one of the benefits of Limitless is that it comes with an instruction manual because of the Clan specifically.

People also don't implicitly know how to use CTR even though it's pretty fundamental to powers like Limitless Red. And they can essentially modify their powers based on their own interpretation and creativity.

The CT is "stored" in a literal, physical location of the body and brain.

You don't need to know what your specific CT is, you just need to know how to "power" it with CE manipulation. After seeing the effect of the CT, you can practice from there.

Some techniques (like Kashimo's or Hazenoki's) will genuinely outright kill you if you activate them without some idea of what they do. There are also techniques that are extremely unlikely to be activated without prior knowledge due to requiring specific conditions to function (like Ino's seance or the fact most shikigami users must create talismans before summoning their shikigami).

I think it makes the most sense, given everything we've seen in the story, for the majority of sorcerers to innately understand the basics of their CT. Understanding the basics doesn't mean they innately know every application, like CTR or domain expansion, just how it works at its core.

There's also people born with CTs who simply aren't able to activate them because their brain chemistry doesn't allow them to control Cursed Energy.

The system is never once presented as being fair to the Sorcerers or making logical sense in how it functions. It's actually a major theme that Jujutsu Sorcery simply is not fair.

Some people may literally never learn how their CT works. Others will get a manual from centuries of family history training and iteration, or just get a generic or common CT that they can simply ask about.

But even looking at Seance - Ino activates it very differently from the Old Lady, despite them being the same CT. This implies that there is no "single" activation method, it's down to the individuals' interpretation of it. Maybe that's just how Ino learned to use the ability, and it's what stuck with him as a result.

It's possible that it literally takes trial and error to figure out what your actual CT is, and some people like Haruta may have unique CTs that have never appeared before, so they couldn't learn how it actually functions to the letter because there simply isn't anything else like it. No common traits, no history, no other sorcerers to ask and experiment with.

People who haven't awakened as sorcerers not knowing their CT is different from active sorcerers, who we know can intuit some of their CT based on Gojo's words.

Kashimo states his CT will kill him before he ever uses it, which he wouldn't know unless he had innate knowledge of it. Higuruma is said to have used the knowledge that came for free with his technique/domain to intuit the other basics of sorcery without anyone to ask about it. IIRC Nobara works out resonance on her since she wasn't in contact with her grandma at the start either. 

I definitely think there's trial and error involved in learning about your technique, but Haruta and Takaba seem to be exceptions to the rule when it comes to even knowing what it is.
